Hygiene Incharge
As a Hygiene In charge, I have been taking care of smooth functioning of operation as per Municipality guidelines
through HACCP implementation in Hotel which includes:
Conducting Supplier Audits and follow up for the corrective actions taken by them.
Coordinating with Laboratory for sample collection and analyzing the results.
Coordinating with pest control team for effective treatments.
Follow up with chefs for all temperature monitoring in kitchen for food items and chillers and Reporting deviations
to Executive chef for corrective actions.
Coordinating with departments to take corrective actions for Dubai Municipality inspection report.
Conducting internal Audits for all the outlets and reporting it to the respective managers.
Conducting HACCP meetings with General Manager and HACCP team Members to ensure food safety is a
priority during all operations.
Ensuring all food handlers are equipped with mandatory Food Hygiene trainings and also, their knowledge in food
safety is up to date by providing in house training.
Verifying daily and weekly cleaniliness by stewarding team along with Chief steward.
Conducting inspection with maintenance team for preventive maintenance schedules are being followed.
Updating SOPs and ensuring they are being follwed in kitchen, restaurants and at all areas where food safety can
be compromised.
ADDITIONAL TASK
Conducted Food Safety Audit for Radisson Blu Muscat, Oman and Radisson Blu Sohar, Oman
Qualifications
Certifications:
Level 4 award in food Safety Management.
HACCP Internal Auditing.
Level 3 Supervising HACCP.
First Aid Training.
