Foodstuff. At present they have 3 department stores in Dubai and one in Abu Dhabi &Masdar,
which have both foodstuff and non-food items . It also has a franchisee in Kuwait and soon to
be opened in Saudi Arabia, and Qatar. Other than our franchisee the company also caters to
various customers who would like to roll out our lines in their shops. My role is to enhance the
organizational food safety culture most importantly to serve safe food to our loyal consumers.
Roles and Responsibilities
 Ensuring high standards of food quality from point of purchase to meal preparation,
cooking and service.
 Respond to queries from auditors, municipality inspectors etc in a timely manner.
 Daily Inspection of Staff personnel hygiene and health condition; maintaining the Health
card records and ensuring that regular health checkups are carried out.
 Daily Inspection of equipment to ensure that they are maintained well and are clean;
regular servicing & preventive maintenance is carried out; proper breakdown history
reports for each equipment is maintained
 Record Keeping- Ensuring all relevant records & reports are up to date
 Staff training on basic hygiene; proper cleaning procedures, proper cooking & storage
methods
 Setting up cleaning schedules for stewarding (Daily, monthly & yearly) & Engineering
(EFK’s; Ice machine and ceiling)
 Ensuring that there is proper coordination & communication between the departments in
order to maintain proper hygienic conditions of the company
 Arrange inspections and ensure compliance with their standards.

running of HACCP system from purchase through production till shipment by
