Indicator of food product quality
Sanitization: states that removal of microorganisms completely .
Food sanitization : the promotion of hygiene and prevention of disease
By maintence of sanitary conditions for food handlers and food processing
facilities and equipment
Food quality: quality acceptable by consumers To there size shape texture.
Quality indicating organisms: the organisms
Are of two types,
 Pathogenic
 Nonpathogenic
The indicator of microbial quality or shelf life are the organisms or their metabolic
products in foods at ceratin level may be used to assess existing quality or to predict
product shelf-life.
The indicator organisms should meet some of the following
 Indicator of product quality
 Food composition
 Some of the organisms
 Plate count of an organisms
 Some of the organisms involved in food spoilage which results in poor quality of food
 The organisms are
 Coliform bacteria
 Enterobacteria
 Fungi,mold
The water which is suitable for public water supply is known as potable water.
The water with characteristic of wholesome water and palatable water is known as
potable water.
The water which is tasteful for drinking and asthetically pure is known as palatable
water.
 Portable water purification devices are self contained easily transported units used to
purify water from untreated sources for drinking purpose.
 The main theme is to eliminate the pathogens, solid particals present in it.
 Techniques
 Heat boiling
 Filtration
 Charcoal adsorption
 Other chemical disinfection additives
 Hydrogen peroxide
 Ozone water disinfection
 Solar water disinfection
 Solar distillation
 Home made water filters
 Drinking water known as potable water safe water used to drink
 Safe is the term given tonwater free from pathogens
