Research Project at M.Tech (Food Technology)
Microencapsulation of flaxseed oil and its utilization.
Flaxseed contains good source of ω-3 fatty acid. ALA is beneficial for infant brain
development, reducing blood lipids and cardiovascular diseases.The aim of this Research was to
optimize extraction of flaxseed oil process by ultrasonic treatment and determination of its
effect on ω-3 (PUFA) fatty acid. The extracted oil was subjected to GC analysis to determine ω-
3 fatty acid. The extracted PUFA was microencapsulated by spray drying technique using blends
of whey protein concentrate and maltodextrin as carrier materials. The SEM image of
encapsulated samples showed that most of the particles were of spherical in shape without
apparent cracks or fissures, which promotes better protection and retention of the core
material. The storage stability of microencapsulated powder was carried out by determining
peroxide value. Both oil extracted with the UAE and oil obtained after encapsulations were
subjected to Gas Chromatography(GC) analysis of fatty acid profile, and it was found that total
polyunsaturated fatty acid content in encapsulated Powder 47.32% (C18:3n3),Initially in Oil
52.37.32% (C18:3n3). The omega -3 fatty acid was successfully utilized in ice-cream, cake and
RTS beverages without disturbing their chemical and organoleptic quality attributes
