Digestive System
Foods must be broken down into molecules that are small enough to
enter body cells, a process known as digestion.
Digestion
Digestive System
The organs involved in the breakdown of food-collectively called the
digestive system.
 The medical specialty that deals with the structure, function,
diagnosis, and treatment of diseases of the stomach and intestines
is called gastroenterology.
 The medical specialty that deals with the diagnosis and treatment
of disorders of the rectum and anus is called proctology.
Two groups of organs compose the
digestive system:
I. The gastrointestinal (GI) tract,
which include
• mouth,
• most of the pharynx,
• esophagus,
• stomach,
• small intestine, and
• large intestine
II. The accessory digestive organs
include
• teeth,
• tongue,
• salivary glands,
• liver,
• gallbladder, and
• pancreas
 Ingestion: taking food into mouth.
 Secretion: release of water, acid, buffers, and enzymes into lumen of
GI tract.
 Mixing and propulsion: churning and propulsion of food through
GI tract.
 Digestion: mechanical and chemical breakdown of food.
 Absorption: passage of digested products from GI tract into blood
and lymph.
 Defecation: elimination of feces from GI tract.
Functions of the Digestive System
The Layers of GI tract
The wall of the GI tract from the lower esophagus to the anal canal has the
same basic, four-layered arrangement of tissues from deep to superficial,
are
 the mucosa,
 submucosa,
 muscularis, and
 serosa/adventitia.
The mucosa, or inner lining of the GI tract, is a mucous membrane.
It is composed of
I. A layer of epithelium (serves as protective, secretion and absorption) in
direct contact with the contents of the GI tract,
II. A layer of connective tissue called the lamina propria (contaning
blood and lymphatic vessels, which are the routes by which nutrients
absorbed into the GI tract reach the other tissues of the body), and
III. a thin layer of smooth muscle; muscularis mucosae (which increase
the surface area for digestion and absorption).
Mucosa
Submucosa
The submucosa consists of areolar connective tissue that binds the
mucosa to the muscularis. It contains many blood and lymphatic vessels
that receive absorbed food molecules.
Muscularis
The muscularis of the mouth, pharynx, and superior and middle parts of
the esophagus contains skeletal muscle that produces voluntary
swallowing.
Serosa
Serosa, a serous membrane, is suspended in the abdominopelvic cavity.
Serosa is composed of areolar connective tissue and simple squamous
epithelium that reduce the friction from muscle movements.
Peritoneum
The peritoneum is the largest serous
membrane of the body.
The peritoneum is divided into the
parietal peritoneum, which lines the
wall of the abdominopelvic cavity, and
the visceral peritoneum, which covers
some of the organs in the cavity and is
their serosa.
The slim space containing lubricating serous fluid that is between the
parietal and visceral portions of the peritoneum is called the peritoneal
cavity
Oral Cavity
Buccal Cavity is formed by the cheeks, hard
and soft palates, and tongue.
The lips or labia, contain the orbicularis oris
muscle.
The oral vestibule (entrance to a canal) of the
oral cavity is the space bounded externally by
the cheeks and lips and internally by the gums
and teeth.
Salivary Gland
A salivary gland is a gland that
releases a secretion called saliva into
the oral cavity.
SG include labial, buccal, and palatal
glands in the lips, cheeks, and palate,
respectively, and lingual glands in the
tongue, all of which make a small
contribution to saliva.
There are three pairs of major salivary
glands: the parotid, submandibular, and
sublingual glands
Tongue
The tongue is a muscular organ
in the mouth of most vertebrates
that manipulates food for
mastication and is used in the act
of swallowing.
Teeth
Function: Cut, tear, and pulverize food.
Pharynx
When food is first swallowed, it passes
from the mouth into the pharynx
(throat).
The pharynx is composed of skeletal
muscle and lined by mucous
membrane, and is divided into three
parts: the nasopharynx, the
oropharynx, and the laryngopharynx.
Esophagus
Esophagus is a collapsible muscular tube, about 25
cm (10 in.) long, that lies posterior to the trachea.
The esophagus begins at the inferior end of the
laryngopharynx, and ends in the superior portion of
the stomach.
It secretes mucus and transports food into the
stomach.
Stomach
Stomach secretes gastric juice, which contains HCl (kills bacteria and
denatures protein), pepsin (begins the digestion of proteins), intrinsic
factor (aids absorption of vitamin B12), and gastric lipase (aids
digestion of triglycerides).
pH of stomach: 1.5-3.5
Pancreas
 From the stomach, chyme passes into the small intestine. Because chemical
digestion in the small intestine depends on activities of the pancreas, liver,
and gallbladder, we first consider the activities of these accessory digestive
organs and their contributions to digestion in the small intestine.
 The pancreas, is about 12-15 cm long and 2.5 cm thick, lies posterior to the
greater curvature of the stomach. The pancreas consists of a head, a body,
and a tail and is usually connected to the duodenum by two ducts.
 Endocrine pancreatic islets (islets of Langerhans) secrete hormones, and
exocrine acini secrete pancreatic juice.
 Pancreatic juice contains enzymes that digest starch (pancreatic amylase),
proteins (trypsin, chymotrypsin, carboxypeptidase, and elastase),
triglycerides (pancreatic lipase), and nucleic acids (ribonuclease and
deoxyribonuclease).
The liver is the heaviest gland of the body, weighing about 1.4 kg (about 3lb) in
an average adult. The liver is inferior to the diaphragm and occupies most of
the right hypochondriac and part of the epigastric regions of the
abdominopelvic cavity.
Liver
The liver is composed of several components:
1. Hepatocytes: Hepatocytes are the major functional cells of the liver and
perform a wide array of metabolic, secretory, and endocrine functions.
2. Bile canaliculi: These are small ducts between hepatocytes that collect bile
produced by the hepatocytes.
3. Hepatic sinusoids: These are highly permeable blood capillaries between
hepatocytes and nutrient-rich deoxygenated blood from branches of the hepatic
portal vein.
The gallbladder is a pear-shaped sac that is located in a depression of the
posterior surface of the liver. It is 7–10 cm (3–4 in.) long and typically
hangs from the anterior inferior margin of the liver.

 Carbohydrate metabolism,
 Lipid metabolism,
 Protein metabolism,
 Processing of drugs and hormones,
 Excretion of bilirubin,
 Synthesis of bile salts,
 Storage,
 Phagocytosis,
 Activation of vitamin D
Small intestine
Most digestion and absorption of
nutrients occur in a long tube called the
small intestine. Because of this, its
structure is specially adapted for these
functions. Its length alone provides a
large surface area for digestion and
absorption, and that area is further
increased by circular folds, villi, and
microvilli.
It averages 2.5cm in diameter; its length is about 3m in a living person and
about 6.5m in a cadaver due to the loss of smooth muscle tone after death.
1. Segmentations mix chyme with digestive juices and bring food into
contact with mucosa for absorption; peristalsis propels chyme through
small intestine.
2. Completes digestion of carbohydrates, proteins, and lipids; begins and
completes digestion of nucleic acids.
3. Absorbs about 90% of nutrients and water that pass through digestive
system.
Functions of the small intestine
The large intestine is the terminal portion of the GI tract. The overall
functions of the large intestine are the completion of absorption, the
production of certain vitamins, the formation of feces, and the expulsion of
feces from the body.
Large intestine
The 4 major functions of the large intestine are recovery of water and
electrolytes, formation and storage of faeces and fermentation of some of the
indigestible food matter by bacteria. The ileocaecal valve controls the entry of
material from the last part of the small intestine called the ileum
Functions of the large intestine
ORGAN FUNCTION(S):
Tongue Maneuvers food for mastication, shapes food into a bolus, maneuvers food for deglutition, detects
sensations for taste, and initiates digestion of triglycerides.
Salivary glands Saliva produced by these glands softens, moistens, and dissolves foods; cleanses mouth and
teeth; initiates the digestion of starch.
Teeth Cut, tear, and pulverize food to reduce solids to smaller particles for swallowing.
Pancreas Pancreatic juice buffers acidic gastric juice in chyme, stops the action of pepsin from the stomach,
creates the proper pH for digestion in the small intestine, and participates in the digestion of carbohydrates,
proteins, triglycerides, and nucleic acids.
Liver Produces bile, which is required for the emulsification and absorption of lipids in the small intestine.
Gallbladder Stores and concentrates bile and releases it into the small intestine.
Mouth See the functions of the tongue, salivary glands, and teeth, all of which are in the mouth. Additionally, the
lips and cheeks keep food between the teeth during mastication, and buccal glands lining the mouth produce
saliva.
Pharynx Receives a bolus from the oral cavity and passes it into the esophagus.
Esophagus Receives a bolus from the pharynx and moves it into the stomach; this requires relaxation of the upper
esophageal sphincter and secretion of mucus.
Stomach Mixing waves combine saliva, food, and gastric juice, which activates pepsin, initiates protein digestion,
kills microbes in food, helps absorb vitamin B12, contracts the lower esophageal sphincter, increases stomach
motility, relaxes the pyloric sphincter, and moves chyme into the small intestine.
Small intestine Segmentation mixes chyme with digestive juices; peristalsis propels chyme toward the ileocecal
sphincter; digestive secretions from the small intestine, pancreas, and liver complete the digestion of
carbohydrates, proteins, lipids, and nucleic acids; circular folds, villi, and microvilli help absorb about 90 percent
of digested nutrients.
Large intestine Haustral churning, peristalsis, and mass peristalsis drive the colonic contents into the rectum;
bacteria produce some B vitamins and vitamin K; absorption of some water, ions, and vitamins occurs; defecation.

Digestive system

  • 2. Foods must be broken down into molecules that are small enough to enter body cells, a process known as digestion. Digestion Digestive System The organs involved in the breakdown of food-collectively called the digestive system.  The medical specialty that deals with the structure, function, diagnosis, and treatment of diseases of the stomach and intestines is called gastroenterology.  The medical specialty that deals with the diagnosis and treatment of disorders of the rectum and anus is called proctology.
  • 3. Two groups of organs compose the digestive system: I. The gastrointestinal (GI) tract, which include • mouth, • most of the pharynx, • esophagus, • stomach, • small intestine, and • large intestine
  • 4. II. The accessory digestive organs include • teeth, • tongue, • salivary glands, • liver, • gallbladder, and • pancreas
  • 5.  Ingestion: taking food into mouth.  Secretion: release of water, acid, buffers, and enzymes into lumen of GI tract.  Mixing and propulsion: churning and propulsion of food through GI tract.  Digestion: mechanical and chemical breakdown of food.  Absorption: passage of digested products from GI tract into blood and lymph.  Defecation: elimination of feces from GI tract.   • 6. The Layers of GI tract The wall of the GI tract from the lower esophagus to the anal canal has the same basic, four-layered arrangement of tissues from deep to superficial, are  the mucosa,  submucosa,  muscularis, and  serosa/adventitia.

  • 8. The mucosa, or inner lining of the GI tract, is a mucous membrane. It is composed of I. A layer of epithelium (serves as protective, secretion and absorption) in direct contact with the contents of the GI tract, II. A layer of connective tissue called the lamina propria (contaning blood and lymphatic vessels, which are the routes by which nutrients absorbed into the GI tract reach the other tissues of the body), and III. a thin layer of smooth muscle; muscularis mucosae (which increase the surface area for digestion and absorption).   • 9. Submucosa The submucosa consists of areolar connective tissue that binds the mucosa to the muscularis. It contains many blood and lymphatic vessels that receive absorbed food molecules. Muscularis The muscularis of the mouth, pharynx, and superior and middle parts of the esophagus contains skeletal muscle that produces voluntary swallowing. Serosa Serosa, a serous membrane, is suspended in the abdominopelvic cavity. Serosa is composed of areolar connective tissue and simple squamous epithelium that reduce the friction from muscle movements.
  • 10. Peritoneum The peritoneum is the largest serous membrane of the body. The peritoneum is divided into the parietal peritoneum, which lines the wall of the abdominopelvic cavity, and the visceral peritoneum, which covers some of the organs in the cavity and is their serosa. The slim space containing lubricating serous fluid that is between the parietal and visceral portions of the peritoneum is called the peritoneal cavity
  • 11. Oral Cavity Buccal Cavity is formed by the cheeks, hard and soft palates, and tongue. The lips or labia, contain the orbicularis oris muscle. The oral vestibule (entrance to a canal) of the oral cavity is the space bounded externally by the cheeks and lips and internally by the gums and teeth.
  • 12. Salivary Gland A salivary gland is a gland that releases a secretion called saliva into the oral cavity. SG include labial, buccal, and palatal glands in the lips, cheeks, and palate, respectively, and lingual glands in the tongue, all of which make a small contribution to saliva. There are three pairs of major salivary glands: the parotid, submandibular, and sublingual glands
  • 13. Tongue The tongue is a muscular organ in the mouth of most vertebrates that manipulates food for mastication and is used in the act of swallowing.
  • 14. Teeth Function: Cut, tear, and pulverize food.
  • 15. Pharynx When food is first swallowed, it passes from the mouth into the pharynx (throat). The pharynx is composed of skeletal muscle and lined by mucous membrane, and is divided into three parts: the nasopharynx, the oropharynx, and the laryngopharynx.
  • 16. Esophagus Esophagus is a collapsible muscular tube, about 25 cm (10 in.) long, that lies posterior to the trachea. The esophagus begins at the inferior end of the laryngopharynx, and ends in the superior portion of the stomach. It secretes mucus and transports food into the stomach.

  • 20. Stomach secretes gastric juice, which contains HCl (kills bacteria and denatures protein), pepsin (begins the digestion of proteins), intrinsic factor (aids absorption of vitamin B12), and gastric lipase (aids digestion of triglycerides). pH of stomach: 1.5-3.5
  • 21. Pancreas  From the stomach, chyme passes into the small intestine. Because chemical digestion in the small intestine depends on activities of the pancreas, liver, and gallbladder, we first consider the activities of these accessory digestive organs and their contributions to digestion in the small intestine.  The pancreas, is about 12-15 cm long and 2.5 cm thick, lies posterior to the greater curvature of the stomach. The pancreas consists of a head, a body, and a tail and is usually connected to the duodenum by two ducts.  Endocrine pancreatic islets (islets of Langerhans) secrete hormones, and exocrine acini secrete pancreatic juice.  Pancreatic juice contains enzymes that digest starch (pancreatic amylase), proteins (trypsin, chymotrypsin, carboxypeptidase, and elastase), triglycerides (pancreatic lipase), and nucleic acids (ribonuclease and deoxyribonuclease).

  • 23. The liver is the heaviest gland of the body, weighing about 1.4 kg (about 3lb) in an average adult. The liver is inferior to the diaphragm and occupies most of the right hypochondriac and part of the epigastric regions of the abdominopelvic cavity. Liver The liver is composed of several components: 1. Hepatocytes: Hepatocytes are the major functional cells of the liver and perform a wide array of metabolic, secretory, and endocrine functions. 2. Bile canaliculi: These are small ducts between hepatocytes that collect bile produced by the hepatocytes. 3. Hepatic sinusoids: These are highly permeable blood capillaries between hepatocytes and nutrient-rich deoxygenated blood from branches of the hepatic portal vein.

  • 26. Small intestine Most digestion and absorption of nutrients occur in a long tube called the small intestine. Because of this, its structure is specially adapted for these functions. Its length alone provides a large surface area for digestion and absorption, and that area is further increased by circular folds, villi, and microvilli. It averages 2.5cm in diameter; its length is about 3m in a living person and about 6.5m in a cadaver due to the loss of smooth muscle tone after death.

The overall functions of the large intestine are the completion of absorption, the production of certain vitamins, the formation of feces, and the expulsion of feces from the body. Large intestine The 4 major functions of the large intestine are recovery of water and electrolytes, formation and storage of faeces and fermentation of some of the indigestible food matter by bacteria.   • 32. ORGAN FUNCTION(S): Tongue Maneuvers food for mastication, shapes food into a bolus, maneuvers food for deglutition, detects sensations for taste, and initiates digestion of triglycerides. Salivary glands Saliva produced by these glands softens, moistens, and dissolves foods; cleanses mouth and teeth; initiates the digestion of starch. Teeth Cut, tear, and pulverize food to reduce solids to smaller particles for swallowing. Pancreas Pancreatic juice buffers acidic gastric juice in chyme, stops the action of pepsin from the stomach, creates the proper pH for digestion in the small intestine, and participates in the digestion of carbohydrates, proteins, triglycerides, and nucleic acids. Liver Produces bile, which is required for the emulsification and absorption of lipids in the small intestine. Gallbladder Stores and concentrates bile and releases it into the small intestine. Mouth See the functions of the tongue, salivary glands, and teeth, all of which are in the mouth. Additionally, the lips and cheeks keep food between the teeth during mastication, and buccal glands lining the mouth produce saliva.
  • 33. Pharynx Receives a bolus from the oral cavity and passes it into the esophagus. Esophagus Receives a bolus from the pharynx and moves it into the stomach; this requires relaxation of the upper esophageal sphincter and secretion of mucus. Stomach Mixing waves combine saliva, food, and gastric juice, which activates pepsin, initiates protein digestion, kills microbes in food, helps absorb vitamin B12, contracts the lower esophageal sphincter, increases stomach motility, relaxes the pyloric sphincter, and moves chyme into the small intestine. Small intestine Segmentation mixes chyme with digestive juices; peristalsis propels chyme toward the ileocecal sphincter; digestive secretions from the small intestine, pancreas, and liver complete the digestion of carbohydrates, proteins, lipids, and nucleic acids; circular folds, villi, and microvilli help absorb about 90 percent of digested nutrients. Large intestine Haustral churning, peristalsis, and mass peristalsis drive the colonic contents into the rectum; bacteria produce some B vitamins and vitamin K; absorption of some water, ions, and vitamins occurs; defecation.
