Job Description
• To monitor activities relating to F&B cost controls with hotel.
• To verify the hotel standard purchase specifications are followed on continuing basis.
• To check prices on daily quotation sheets.
• To verify the accuracy of the entries, extensions and totals of the Receiving Clerk’s report
• For all F&B and others non food & Beverages items.
• To verify that Notice of Error Correction and goods Received without invoice forms have
• been prepared where applicable.
• To conduct monthly Market Survey all the food & beverages and others items.
• To spot check merchandise daily to see that it meets the specifications and review any
• Deficiencies with receiving clerk to ascertain the reason for sub-standard merchandise.
• To reconcile total food purchases with Receiver clerks receiving report for the month.
• To ensure that all merchandise is stored in properly locked areas and monitor control of keys
• for all such areas.
• To run periodic butcher tests.
• To assist the guest with all queries.
• To be aware of Hotel Customer Programs.
• To act according to the complaint handling standards & procedures.
• To carry out reasonable duties as may be requested by the department head.
• To be aware of SGSS and apply its principles at all times.
• To prepare daily food cost reports and weekly potential cost reports.
• To prepare food and beverages reconciliation’s of costs for main accounts section.
• To assist the F&B Manager and Executive Chef in preparation and maintenance of standard recipe files.
• To attend any F&B meeting and provide cost information’s to management for operational decisions.
• To check daily F&B requisitions and confirm that daily sales analysis is made on entrée sales.
• To assist in preparation of annual budget, month forecast and related financial information applicable
• to the Food & Beverage division.
• To check receiving reports and observe daily the quantity of merchandise coming into the hotel
• Through receiving office.
• To review purchase records for price comparisons and cost figures required for correct costing of menus.
• To take month end inventories of both food and beverages.
• To manage and keep perpetual inventories of beverage storerooms. Cold rooms and food dry rooms.
• To make spot check on bars, storeroom, kitchen.
• Ensure the par-stock established for each bar is maintained.
• Work closely with the Purchasing officer, F&B manager and executive Chef on testing programs
• and purchase specifications.
• To participate in the formulation and enforcement of sound control procedures for banquet beverage
• bars including issue, return and re-issue practices.
• To be aware of any activities/ events operating within the hotel in order to promote and maximize sales.
• To suggest means and ways of reducing costs without affecting the quality and standard of the hotel.
