INTRODUCTION:-
•A cereal is any grass cultivated for the edible components of its grain
botanically type of fruit called as Caryopsis., composed of the
endosperm , germ and bran eg , corn , wheat etc..
•Corn is a starchy vegetable and cereal grain that has been eaten all
over the world for centuries. Its rich in fibre, vitamins, and minerals.
•Mainly the milling process of corn are in two types wet milling and dry
milling .

OF CORN:-
PROCESSING OF CORN:-
•Corn is one of the worlds most popular cereal grains . It’s the
seed of a plant in the grass family , native to central America
but grown in countless varieties world wide.
•Mainly the processing of corn takes place in 2 ways they are:-
•Wet milling
•Dry milling
•Each process generates unique co- products.
CORN WET MILLING PROCESS:-
•The corn wet milling process is designed to extract the highest use
and value from each component of the corn kernel.
•The process begins with the corn kernels being soaked in large tanks
called steep tanks in a dilute aqueous sulfur dioxide solution.
•The softened kernel is then processed to remove the germ which is
further processed to remove the high value corn oil.
•The germ meal remaining after the oil is extracted and marketedfor
animal feed use.
WET MILLING:-
•The wet milling process is capital intensive with higher
operating costs, the ability to produce a variety of products
can be valuable in dealing with volatile markets.
•The wet milling process results in slightly lower ethanol yields
than a traditional dry milling process since some of the
fermentable starch exits the process attached to the saleable
products.

ADVANTAGES OF WET MILLING:-
•Lower capital cost.
•Produces multiple high value added co-products.
•The process enables food and fuel production.
•Wet milling minimizes starch yield loss compared to dry fractionation
alone , resulting in higher quality germ , clean fibre and greater
ethanol yield.
•The germ wet mill generates greater revenues and greater net profit.
CO-PRODUCTS OF WET
MILLING OF CORN:-
• Corn syrup
• Corn starch
• Corn oil
• Other co-products are organic acids
• Vitamins
• Amino acids
• Citric acid
• Lactic acid
• Food gums.
MODIFIED WET MILLING:-
•Modified wet milling. This technique involves the use of
water and produces products with a high purity.
•This method, used for food applications, grinds the raw
material in small particles to increase the surface area.
• Then, the protein is extracted at an alkaline pH and
followed by acid precipitation..
MODIFIED WET MILLING:-
•This method separates insoluble fiber using the differences in
swelling properties of the fraction.
• At room temperature, fiber has a higher swelling capability
than starch. Such differences in swelling capability give rise to
different particle sizes.
•The insoluble fraction is dispersed in water and screened
through sieves with pore diameters in a range from 30 to
300 μm.
DRY MILLING OF CORN:-
• Dry milling is the simplest method of producing maize products for human
consumption.
• Grinding whole kernel corn in a grindstone or roller mill to produce flour or
meal is a simple method used worldwide when the ground products are to be
consumed shortly after processing.
• The corn dry milling process is a less versatile, less capital-intensive
process that focuses primarily on the production of grain ethanol.
• In this process the corn kernels are hammer milled into a medium-to-fine
grind meal for introduction to the ethanol production process.

•In dry mill the entire corn kernels is
ground into a meal and then fermented
into alcohol .
•Co-product is distillers wet grains which
can be dried.[DDGS-Dried Distillers
Grains with Soluble] and co2.

CONCLUSION:-
•Consuming of all cereals are important in our daily life. Because they
take part an essential role to get starch , protein, carbohydrate for
our body.
•Corn can be processed mainly in 2 types wet milling and dry milling.
•Consuming of corn also important like other cereals .
•Today modified type of wet milling and dry milling of corn are also
available.

  • 1. DRY MILLING AND WET MILLING OF CORN:- Subject: cereals and pulses technology Subject code:-18BEFC13 Submitted by:AbbyNanditta L.G 18001UEF01 Abitha Francis 18003UEF02
  • 2. INTRODUCTION:- •A cereal is any grass cultivated for the edible components of its grain botanically type of fruit called as Caryopsis., composed of the endosperm , germ and bran eg , corn , wheat etc.. •Corn is a starchy vegetable and cereal grain that has been eaten all over the world for centuries. Its rich in fibre, vitamins, and minerals. •Mainly the milling process of corn are in two types wet milling and dry milling .
  • 4. PROCESSING OF CORN:- •Corn is one of the worlds most popular cereal grains . It’s the seed of a plant in the grass family , native to central America but grown in countless varieties world wide. •Mainly the processing of corn takes place in 2 ways they are:- •Wet milling •Dry milling •Each process generates unique co- products.

CORN WET MILLING PROCESS:- •The corn wet milling process is designed to extract the highest use and value from each component of the corn kernel. •The process begins with the corn kernels being soaked in large tanks called steep tanks in a dilute aqueous sulfur dioxide solution. •The softened kernel is then processed to remove the germ which is further processed to remove the high value corn oil. •The germ meal remaining after the oil is extracted and marketedfor animal feed use.

WET MILLING:- •The wet milling process is capital intensive with higher operating costs, the ability to produce a variety of products can be valuable in dealing with volatile markets. •The wet milling process results in slightly lower ethanol yields than a traditional dry milling process since some of the fermentable starch exits the process attached to the saleable products.
  • 12. ADVANTAGES OF WET MILLING:- •Lower capital cost. •Produces multiple high value added co-products. •The process enables food and fuel production. •Wet milling minimizes starch yield loss compared to dry fractionation alone , resulting in higher quality germ , clean fibre and greater ethanol yield. •The germ wet mill generates greater revenues and greater net profit.
  • 13. CO-PRODUCTS OF WET MILLING OF CORN:- • Corn syrup • Corn starch • Corn oil • Other co-products are organic acids • Vitamins • Amino acids • Citric acid • Lactic acid • Food gums.
  • 14. MODIFIED WET MILLING:- •Modified wet milling. This technique involves the use of water and produces products with a high purity. •This method, used for food applications, grinds the raw material in small particles to increase the surface area. • Then, the protein is extracted at an alkaline pH and followed by acid precipitation..
  • 15. MODIFIED WET MILLING:- •This method separates insoluble fiber using the differences in swelling properties of the fraction. • At room temperature, fiber has a higher swelling capability than starch. Such differences in swelling capability give rise to different particle sizes. •The insoluble fraction is dispersed in water and screened through sieves with pore diameters in a range from 30 to 300 μm.

DRY MILLING OF CORN:- • Dry milling is the simplest method of producing maize products for human consumption. • Grinding whole kernel corn in a grindstone or roller mill to produce flour or meal is a simple method used worldwide when the ground products are to be consumed shortly after processing. • The corn dry milling process is a less versatile, less capital-intensive process that focuses primarily on the production of grain ethanol. • In this process the corn kernels are hammer milled into a medium-to-fine grind meal for introduction to the ethanol production process.

  • 21. ADVANTAGES and disadvantages OF DRY MILLING:- • Better efficiency. • Easier milling. • Lower use of energy in fractionation. • Lower capital costs when compared to wet milling. • DISADVANTAGES OF DRY MILLING:- • Danger of explosion.
  • 22. CO-PRODUCTS OF DRY MILLING OF CORN:- •In dry mill the entire corn kernels is ground into a meal and then fermented into alcohol . •Co-product is distillers wet grains which can be dried.[DDGS-Dried Distillers Grains with Soluble] and co2.
  • 24. CONCLUSION:- •Consuming of all cereals are important in our daily life. Because they take part an essential role to get starch , protein, carbohydrate for our body. •Corn can be processed mainly in 2 types wet milling and dry milling. •Consuming of corn also important like other cereals . •Today modified type of wet milling and dry milling of corn are also available.
