traditional regional cuisine to a global delicacy. The documentary covers many facets of Sushi

This problem is amplified in the recent overfishing of Bluefin tuna which is bringing the fish to near
extinction. The documentary provides us with two alternatives for sustaining the population. The
first is to counter demand by educating people on the hazards of over fishing and providing them
with other alternatives such as flounder and other less at risk fish. However, time and time again
modernity has shown that people are not prone to moderation and while the movement has gained
some traction it has unfortunately failed to have to curve demand. The second option is to grow fish
in aquacultures or farms which seems like a good idea at the surface. Capturing and growing
juvenile Bluefin Tuna creates a controlled environment that does not require fishing and makes it
easier to manage the population of fish in captivity and in the wild. However, Tuna ranchers use
approximately 15 pounds of raw fish to produce 1 pound of Tuna. That's a steep price to pay and

Little Tsukiji is a Japanese restaurant serving sushi, sashimi and teppanyaki. Japanese food is very
much popular in Singapore. In Singapore, it is very common for office workers to eat out for lunch.
"As of 2001, there are more than a hundred Japanese restaurants in Singapore, of which about one–
third are sushi restaurants. The rest include family restaurants, izakaya, teppanyaki, ramen and fast
food restaurants. And in many Japanese restaurants, sushi and/or sashimi is a must on the menu."
(Ng, 2001, Pages 8 – 9) Therefore, the choice of a restaurant specialising in teppanyaki, as it is not
as common in Singapore and there is a lot of opportunity to make a mark with differentiation in
products.
Competition for teppanyaki is not as strong as it is with sushi restaurants as there are not as many
teppanyaki restaurants around Singapore. Additionally, where there are a group of restaurants, a few
are bound to be Japenese restaurants serving different types of Japanese food. Within the
neighbourhood of Tanjong Pagar (targeted location for setting up the restaurant), the Japanese
restaurants in the area are that of sushi, sashimi, ramen, gyoza restaurants. There are other Asian
cuisine restaurants around the area such as Korean BBQ and Vietnamese food. More details about

to the entrance of the restaurant, mother and grandmother a few steps in front of me. Today was the
day, I waited three months for, the day in which I get to try Japanese cuisine. What should be
expected? What if it tastes less than desirable? Will my etiquette be correct? I prepared and
researched several hours in advance regarding this. Once inside the restaurant, following closely, the
three of us were seated at an interesting table; like none of other restaurants in the area. A large,
open, flat–topped stove stands in the center, behind it, a chef stands, smiling as we sit down and
open the thick menu of food items. Scanning the chef, noting his tall white hat, his crisply clean
white apron, black uniform, posture, it's not difficult to tell that he had been an employee for a
significant amount of time.
Flipping through the menu, it was apparent the variety of sushi, sashimi and nigiri was
overwhelming. Luckily enough, my mother and grandmother came into this with a plan. Initially we
ordered our drinks, personally I ordered a Japanese soda, and when it was brought to the table I was

very hard to locate, it required a lot of searching before it was finally located. This is a major flaw
for the website as it didn't allow the user to efficiently locate the information they are looking for
hence, causing them to have an unsatisfactory experience (Chaffey 2013).
2. Slow loading time: Due to the website being very intricate and detailed, the loading time for the
website is fairly slow. When pressing on different tabs, sometimes the content fails to load or shows
up a few seconds later. The rule of thumb is website visitors will not hang around the site if they

Cultural Influence Of The Meiji Era On Japanese Food Culture
In producing an anthropological account of my chosen meal event, which is my experience of dining
at the 'Meiji' restaurant in Osaka, I will use a mixed–theoretical approach which is influenced by
Mintz's (1985) Sweetness and Power to show how material conditions and symbolic representations
of food are interrelated. Firstly, I will look at the historical influence of the Meiji Era on Japanese
food culture (Anderson 2005; Hiroko 2008). I will then look at gender in Japanese food culture,
specifically how masculinity is associated with fish markets and sushi preparation, and how these
culturally engrained gender roles correlate with my observations and experience at the restaurant
(Corson 2009; Bestor 2004; Holden 2005). Finally I will discuss the biocultural complexity of food
preferences, followed by an analysis of how food is related to identity formation and highly
symbolic, and whether this symbolic meaning presupposes food preferences created by materialist
conditions (Fischler 1988; Rappoport 2003; Harris 1985; Levi–Strauss 1963). The most memorable
meal event I have experienced occurred over a two week period at a restaurant in Osaka called

One weekend I went with my mom up to this coffee place, that had these chairs that we're tall and
green and they could spin. We sat at the table that had the green spinny chairs and this table was

It was not class meant to learn the whole Japanese language in three weeks, but it was class meant to
