What is Baking?
Baking, process of cooking by dry heat,
especially in some kind of oven. It is
probably the oldest cooking
method. Bakery products, which
include bread, rolls, cookies,
pies, pastries, and muffins, are usually
prepared from flour or meal derived from
some form of grain.
Baking Industry
• Well Baking process is in use by
humans since centuries. It is one of
the most ancient process of food
making & Consumption.
• Baking Industry means mass
producing Bakery products.

Baking?
Some of the common processes in baking are as follows,
• Mixing
• Kneading
• Primary Proofing
• Rising/Folding
• Shaping
• Final proofing
• Baking
• Spraying
• Cooling
• Packaging
What are Equipment used in Baking?
Some of the equipment that are most commonly
used in Baking Industry are as follows,
• Variety of Baking Ovens
• Variety of Mixers
• Refrigerators and Freezers
• Tables and Racks
• Conveyor Belts
• Proofers
• Moulder
• Packaging material, Wrapping/Bagging equipment
What is Process Control ?
Process control is the ability to monitor and
adjust a process to give a desired output. It is
used in industry to maintain quality and improve
performance.
The process of controlling processes can be broken down, into five simple steps:
Importance of Process Control in Food Industry
Process control describes engagement with processes, procedures, and practices that
help monitor and ensure the safety and quality of food during production and
processing.
Like any other Industry, Process control in Food Industry are extremely important.
Here are some of the key points that can be improved by using it.
• Maintain Throughput
• Consistent Product Quality
• Yield
• Energy Efficiency
• Low manufacturing Cost
• Improved Safety
What if we don’t use process controls
As we know Process Controls keep our processes in check and
helps us to produce steady amount of products. Here are some
points that may go wrong in Baking Industry without using
them,
• Undercooked Food
• Burnt Food
• Food Wastage
• Improper Packaging and Labelling
• Improper mixing (wrong Texture & Taste)
