2. For the brioche you will need:
• 350g flour
• 175g butter
• 1 teaspoon salt
• 42g baker’s yeast
• 2 tablespoons water
• 4 eggs + 1 egg yolk
• 50g sugar
3. METHOD
• Mix the baker’s yeast
with the water
• Mix the flour with the
salt, the sugar and the
eggs
• Add the baker’s yeast
mixed with water
• Knead this dough
• Cover it and put it in the
fridge for 12 hours.
4. • The day after, roll the
dough on a floured
surface
• Fold it in 4 and roll again
• Roll into a snake shape
and cut it into 3 parts
• Roll each part into a
snake shape and make a
plait with them
• Put it on a baking tray
covered with baking
paper
• Leave for leavening in a
mild place for 1 hour
5. • Pre heat the oven for 10
minutes (250°C)
• Slather the plait with
the egg yolk
• Bake for 35 minutes
