Recipe
• 450g
strong
granary
malted
flour
• 2
teaspoons
of
salt
• Pinch
of
caster
sugar
• 1
tablespoon
corn
oil
• 15g
fresh
yeast
(7g
dried
yeast)
• 300ml
warm
water
Topping:
• 2
tablespoons
of
water
• ½
teaspoon
of
salt
• Granary
flour
to
sprinkle
Method
• Place
the
flour
in
a
bowl,
mix
in
the
salt.
• Dissolve
the
yeast
with
the
warm
water
and
add
a
pinch
of
caster
sugar.
• Add
the
corn
oil
to
the
flour
and
make
a
well
in
the
middle.
• Stream
in
the
yeast
and
water
and
bring
the
dough
together
to
form
slightly
sticky
dough
–
not
to
dry!
• Knead
well
for
10
minutes,
and
then
form
a
ball.
• Slash
a
cross
in
the
top
and
place
in
an
oiled
bowl
with
cling
film.
Prove
for
an
hour
until
it
is
doubled
in
size.
• Knock
back
the
dough
and
place
in
an
oiled
and
floured
rectangle
loaf
tin.
Prove
again
until
it
has
doubled
in
size.

• Mix
the
water
and
salt
together
and
brush
the
top
of
the
loaf.
• Sprinkle
with
granary
flour
and
bake
in
a
pre
heated
oven
at
200c
for
18-‐20mins
–
until
the
loaf
is
golden.

• Water
and
milk
above
50c
will
kill
yeast.
• Water
in
bread
gives
it
a
better
crust.
Milk
in
bread
gives
it
a
better
texture.
• Chaffing
is
the
name
for
creating
a
smooth
ball
of
dough
which
is
then
left
to
rise.
