4. DEFINITION OF SUGAR,
Sugar is an important source of food energy. During digestion,
all food carbohydrates (starches and sugars) break down into
single molecule sugars. These sugars are absorbed from the
intestine into the blood stream and travel to the cells, where
they are used to provide energy for cellular functions.

6. Formula Sugar
C12H22O11
What is the formula for a simple sugar?
Simple sugars are carbohydrates. Glucose and fructose are
monosaccharide's and sucrose is a disaccharide of the two
combined with a bond. Glucose and fructose have the same
molecular formula (C6H12O6) but glucose has a six member ring
and fructose has a five member ring structure.

8. 1. Cane handling and preparation

are then fed to the milling tandem for
efficient juice extraction .

10. 2. Milling (Juice Extraction)
The cane shall pass through the milling tandem (consisting
of 4 mills) for extraction of juice. The cane is conveyed
between mills by rake elevators. Each mill is driven by
hydraulic drives driven by hydro-motors.

16. 3 . Juice Clarification
Sugar cane juice has a pH of about
4.0 to 4.5 which is quite acidic.

18. 4. Evaporation
The solicited syrup is pumped into pans for crystallization. The process
of crystallization initiated in pans is completed in the crystallizers. After
mother liquor is exhausted to the optimum level i.e. maximum sugar
from mother liquor has been converted into sugar crystals, the two
constituents are separated in the centrifugal machine.
The residual mother liquor is termed as molasses, a bye product used
for producing Ethanol , alcohol & sprit.

20. 5 . Pan Boiling
The sulphited syrup is pumped into pans for crystallization. The process of
crystallization initiated in pans is completed in the crystallizers. After
mother liquor is exhausted to the optimum level i.e. maximum sugar from
mother liquor has been converted into sugar crystals, the two constituents
are separated in the centrifugal machine. The residual mother liquor is

22. 6. Sugar Conveying, Drying & Packaging
The Sugar Crystals recovered from Centrifugal
machines are conveyed, dried and cooled by
multistoried hoppers by passing hot and cold
air. Thereafter sugar is screened in a grader and
packed as per the different grades.
