5. Introduction
๏ What is sugar?
What we call sugar, the chemist knows as
'sucrose', one of the family of sugars otherwise known as
saccharides in the grouping called carbohydrates.
๏ Sucrose, C12H22O11, is a disaccharide, a condensation
molecule made up of two glucose molecules.
๏ The process whereby plants make sugars is
photosynthesis.
12 CO2 + 11 H2 O = C12 H22 O11 + 12 O2
carbon dioxide + water = sucrose + oxygen

๏ What is Sugarcane?
Sugarcane is member of the grass family. It has a
bamboo like Stalk, grows to a height of from 8 to 15ft, and contains
11 to 15% sucrose by weight.

โข Sugar is obtained from the cane at mills
located near centers of production.
10. Production Process
Cane yard: is a place where the sugarcane
containing vehicles and gathered. After cutting all
the sugar cane sugar cane weight is measured.
Feed Table: All the cane is emptied on a table
which is called feed table.
Cane cutter: There are two sets of cane cutter,
rotate continuously , each set of cutter contains 30
pcs of knives which completely cut the cane to
small pieces. The cutting sugar is carried out to
milling unit.
11. Milling Train
๏ The shredded cane is fed through a series of
crushing mills to extract the sugar rich juice,
which is then pumped away for further
processing. The remaining fiber is called
bagasse. The milling units are consist of 5 units
for maximum extraction of juice. The milling
tandem extract juice about 92% from sugar cane.

Screen Juice: Screened juice is that juice which is collected first milling
unit. This juice contains some bagasse which is resend to the milling chamber and
the clear juice is send to the juice weighing scale.

13. Production Process
The raw juice tanks consist of two
tanks. The first tank is called weight
tank. It contains about capacity 2.2
tons of raw juice. Firstly , the mixing
juice from the second milling tandem
is carried out to the weighing tank.

โข In juice is passed from the bottom of the tank. In this
tank the pH of juice remain 5.0-5.4

15. ๏ Juice Sulphitation tank: This part is called the โheart of sugar
millโ. These are used to lower the pH of the juice and make it neutral(pH
7.0) . This tank is also called reaction tank.
๏ In juice sulphitation tank, calcium hydroxide and sulpher dioxide gas
used for clarification of juice.

18. Multiple Effect Evaporators

evaporated 75 to 80% water.

20. It is also an open type large vessel. Itโs
capacity same as strike receiver. Here the
crystal goes to the stable position and
grows once again slightly.
There are three types of centrifugal machine
A, B and C types. Centrifugal machine are
batch types and C is are continuous.
Centrifugal machine are used to separate the
sugar from the molasses. After centrifugation
5 types
of molasses are obtained. They are
A-light molasses, A-heavy molasses,
B-light molasses, B-heavy molasses
and final molasses. A and B sugar
used is stored as commercial sugar,
C-sugar used as seed.
21. At this stage , the crystalline A and B sugar from centrifugal machine is transferred into the
hopper.
22. At first sugar containing syrup goes to the B chamber where
seed is mixed with syrup and last the syrup goes to the
chamber A and final sugar is prepared.
