Hospitality Industry
The word HOTEL emerges on the XVIII
century form the French language Hospes
that means persons that stays and comes
to latín Hospitium that means hospitality
Hôtel = Mansión
1 Definition
Traditional hotel
• The traditional hotel, is a lodging establishment
that includes the sale of rooms, food and
beverages in the same facility and is determined
by the quality of service, size of the hotel, guest
type, geographical location and the way of
operation and organization
Hotel organization
The establishment of a lodging is a function of several
factors:
The aim and purpose, before creating the establishment are
considered in the original design
The policy of each country
The hotel policy to follow
The profile of the establishment
The level of establishment
The size of the establishment
The localization
Type of services and its variants

The type of service: refers to the way in which
guests are served food and drink. The various
forms of service are directed to the varying needs
of different market segments, and also contribute to
the customer perception of value. Among the types
of food and drink service are:
Table service: Guests are driven to the table by a
waiter. The order is taken on the table and the food
and drink was also brought to the table. The waiters
removed the dirty dishes.
Service buffet: The buffet service is usually associated with
special events and guests approach the buffet table to pick up
food and drink. Weddings, church raffles and Sunday
brunches some restaurants and clubs often use buffet
service.
Caterer: It is very similar to chair service, because the waiters
bring the food to the table of the host. However, the caterer
that often requires transporting food from a central kitchen.
The food can be served on plates in the central food and
transported in special hot cars to dining room, or can be
transported all at once to a small kitchen
Self: In the self, as in the buffet, the customer chooses his
food and brings it to the table. The difference is that in the
self-service restaurant there employees serving dishes to
customers, while the client is served buffet freely.
3 Hotel types
Segmentation. To
counter falling
occupancies during the
1990s, upscale hotels
moved vertically
downward (stretched
their brands) into
midscale operation
10
SEGMENTATION
11
BRAND
Brand. Segmentation has created issues as
well as solutions. Identification of
new products can be muddled by too many
new designs, new logos, and new promotions.
It took time for hoteliers to realize that
collecting a group of like hotels-or even worse,
unlike hotels-under one name did not
automatically create a brand.
Customer recognition is what defines a brand:
recognition of the name and the logo. To that
end, hotel chains have poured advertising
dollars into the creation of new brands
