Nowadays, we are used to hear and read news headlines about outbreaks of foodborne disease. Examples
of foodborne outbreaks that happened only in the last years include E. coli O157:H7 infections linked to
ground beef and ready-to-eat chicken salad, Listeriosis linked to dairy products, Salmonella infections linked
to cucumbers, Hepatitis A linked to frozen berries, etc. Among all types of foods, the most common food
source of fatal infections is meat and poultry. In brief, food hazards can be found in all types of food, and they
can be introduced at any stage of the food chain, from primary producers through to final consumption.
The document is the initial draft of the Food Safety Code by Dubai Municipality's Food Control Department. It outlines regulations for food establishments in Dubai related to approvals, construction, facilities, food handling practices, cleaning and sanitation, training, food labeling and other requirements to ensure food safety. The code provides comprehensive guidance to help food businesses comply with food safety standards and regulations in Dubai.
The document provides safety precautions and guidelines for food preparation. It emphasizes washing hands thoroughly before and during food preparation, keeping all kitchen surfaces clean and dry, and using safe water for food preparation by bringing it to a rolling boil. It also discusses selecting fresh meat and variety meats, suggested cooking methods, tenderizing tough cuts of meat using mechanical or marinating methods, and preparing fruits for cooking.

This document provides an overview of ISO 22000, a food safety management standard. It discusses what ISO is and some key ISO standards. It then defines food safety and introduces ISO 22000, describing its benefits, key elements, and structure. The standard employs a process approach and focuses on preventing food safety hazards across the entire food chain. It requires organizations to establish prerequisite programs, conduct a hazard analysis, and develop a HACCP plan. The document outlines the main requirements around planning, implementation, verification, and improvement of the food safety management system. It concludes by discussing some initial concerns with and ongoing challenges of ISO 22000 certification.
This document provides an overview of ISO 22000 and FSSC 22000 food safety management system standards. It discusses that ISO 22000 is an internationally recognized food safety management system standard that can be applied to any organization in the food chain. FSSC 22000 uses ISO 22000 and additional requirements from PAS 220 to meet the requirements of the Global Food Safety Initiative (GFSI) benchmarking scheme. The document outlines the key requirements of ISO 22000 including management commitment, food safety processes, hazard analysis, and continual improvement. It also provides steps for implementation and certification to the standards.
1. Hazard Analysis Critical Control Point (HACCP) is a systematic preventative approach to food safety that identifies specific hazards and measures for their control to help ensure the safety of food.
2. It defines potential food safety hazards, identifies critical control points in the food production process where hazards can be controlled or eliminated, and establishes controls to monitor those points.
3. HACCP is supported by prerequisite programs including Good Manufacturing Practices that establish basic hygienic and sanitary conditions necessary for safe food production.
This document provides an overview of Hazard Analysis & Critical Control Point (HACCP). It discusses the 7 principles of HACCP including hazard analysis, identifying critical control points, establishing critical limits, monitoring procedures, corrective actions, verification, and record keeping. It also covers implementing a HACCP system, developing a HACCP plan including a process flow diagram and HACCP control chart, and important preliminary steps like assembling a HACCP team and establishing prerequisite programs.

This document provides an action plan template for organizations to implement a Food Safety Management System that meets the requirements of ISO 22000 and FSSC 22000. The plan outlines 37 tasks organized into four phases: preparation, development, implementation, and registration. The tasks include forming an implementation team, developing food safety policies and procedures, conducting a hazard analysis to determine control points, implementing and auditing the management system, and achieving certification through an external registrar. The action plan is designed to help manage the project using a PDCA cycle and track progress towards fully establishing and certifying the food safety system.
As food safety continues to be a worldwide public health issue, the need for improved and more effective food safety systems has increased over the past three decades. A combination of national and international standards, industry needs, customer demands and many other factors has led to tremendous improvements of Food Safety Management Systems.

This document summarizes the protection of Gruyère cheese in Switzerland over time. It describes how Gruyère cheese has been an important product and source of income for the region since the 17th century. In the 1990s, international demand increased but so did lower quality imitations from other countries. This led stakeholders along the Gruyère value chain to develop the Gruyère Declaration in 1992, establishing shared specifications. In 1997, the Gruyère Association was formed to enforce the declaration and promote the region's Gruyère. The Gruyère PDO was established in 2001, and EU recognition in 2010 expanded protection for Swiss PDOs like Gruyère. The Gruyère Association still works to optimally balance

1. The document discusses lessons learned from experiences with geographical indications (GIs) in Eastern European countries, particularly former Yugoslav states.
2. It provides an overview of projects supporting the development of GIs and quality food products in countries such as Serbia, Macedonia, Bosnia, and Croatia.
3. Key lessons highlighted include the need for a long-term, bottom-up approach that empowers producers and addresses both producer and institutional needs.
The document discusses the EU's system for protecting geographical indications (GIs). It outlines the economic benefits of GIs for farmers and consumers. GIs help farmers by ensuring reputation and value stays local, preventing relocation of production, and providing small producers access to markets. Consumers benefit from quality labels that guarantee authenticity and tradition. The EU GI system has led to increased production, exports, prices, and employment for many regional specialties. There are over 1900 registered wine GIs, 325 spirit drink GIs, and 970 foodstuff GIs in the EU.
Geographical indications (GIs) can be an effective tool for rural development when certain key factors are in place. GIs link a quality agricultural product to its geographical place of origin, benefiting the producers, economy, society and environment of that region. For sustainable rural development through GIs, there must be a specific high-quality product, resources in the local place of production, and motivated local people organized collectively. An association is formed and a code of practice developed to define and protect the product. With legal recognition and marketing support, GIs can boost the rural economy through niche markets while preserving cultural heritage and biodiversity of the region. The document summarizes the results of a research project on assessing potential food products in Ukraine that could be registered with a geographical indication (GI). The research identified several popular regional food products and surveyed consumers and producers. It recommended establishing criteria to select products for the GI list and developing profile cards for selected products. It also identified differences between Ukrainian and EU GI laws and next steps to improve support for GI products in Ukraine.
