  a	
  low	
  gluten	
  content)	
  
• 1½	
  teaspoons	
  of	
  salt	
  
• 1	
  tablespoon	
  of	
  clear	
  honey	
  
• 15g	
  fresh	
  yeast	
  (7g	
  dried	
  yeast)	
  
• 2	
  tablespoon	
  olive	
  oil	
  
• 300-­‐350ml	
  warm	
  water	
  
	
  
	
  
	
  
Method	
  
	
  
• Sieve	
  the	
  spelt	
  flour	
  into	
  a	
  bowl	
  and	
  mix	
  in	
  the	
  salt.	
  
	
  
• Dissolve	
  the	
  yeast	
  with	
  the	
  honey	
  in	
  the	
  warm	
  water	
  –	
  don’t	
  use	
  all	
  the	
  warm	
  water.	
  
	
  
• Make	
  a	
  well	
  in	
  the	
  flour	
  and	
  add	
  the	
  olive	
  oil	
  and	
  yeast	
  mixture.	
  
	
  
• Bring	
  the	
  flour	
  together	
  and	
  add	
  the	
  rest	
  of	
  the	
  water	
  if	
  necessary.	
  
	
  
• When	
  you	
  have	
  formed	
  a	
  dough,	
  Remove	
  from	
  the	
  bowl	
  and	
  knead	
  for	
  5	
  minutes	
  –	
  don’t	
  
over	
  knead.	
  
	
  
• Chaff	
  (make	
  into	
  a	
  ball)	
  and	
  cut	
  a	
  cross	
  in	
  to	
  the	
  top	
  of	
  the	
  dough.	
  
	
  
• Put	
  dough	
  in	
  to	
  an	
  oiled	
  bowl	
  and	
  cover	
  with	
  oiled	
  cling	
  film.	
  Leave	
  for	
  1	
  hour	
  to	
  prove.	
  
	
  
• Knock	
  back	
  and	
  make	
  into	
  a	
  loaf	
  shape.	
  Cover	
  and	
  leave	
  for	
  a	
  further	
  20	
  minutes.	
  Score	
  and	
  
then	
  place	
  into	
  a	
  200c	
  oven	
  for	
  30	
  minutes	
  –	
  check	
  after	
  20	
  minutes.	
  
	
  
• When	
  the	
  loaf	
  is	
  cooked	
  and	
  hollow	
  –	
  remove	
  and	
  allow	
  to	
  cool	
  on	
  a	
  wire	
  rack.

All  Rights  Reserved  –  Merlin  Cottage  Kitchen Recipe  Sheet         Title:    Spelt  Bread                        (makes  1  loaf)                 Recipe     • 400g  spelt  flour  (spelt  has  a  low  gluten  content)   • 1½  teaspoons  of  salt   • 1  tablespoon  of  clear  honey   • 15g  fresh  yeast  (7g  dried  yeast)   • 2  tablespoon  olive  oil   • 300-­‐350ml  warm  water         Method     • Sieve  the  spelt  flour  into  a  bowl  and  mix  in  the  salt.     • Dissolve  the  yeast  with  the  honey  in  the  warm  water  –  don’t  use  all  the  warm  water.     • Make  a  well  in  the  flour  and  add  the  olive  oil  and  yeast  mixture.     • Bring  the  flour  together  and  add  the  rest  of  the  water  if  necessary.     • When  you  have  formed  a  dough,  Remove  from  the  bowl  and  knead  for  5  minutes  –  don’t   over  knead.     • Chaff  (make  into  a  ball)  and  cut  a  cross  in  to  the  top  of  the  dough.     • Put  dough  in  to  an  oiled  bowl  and  cover  with  oiled  cling  film.  Leave  for  1  hour  to  prove.     • Knock  back  and  make  into  a  loaf  shape.  Cover  and  leave  for  a  further  20  minutes.  Score  and   then  place  into  a  200c  oven  for  30  minutes  –  check  after  20  minutes.     • When  the  loaf  is  cooked  and  hollow  –  remove  and  allow  to  cool  on  a  wire  rack.
