2. Award Winning Apple Raisin Pie
2 pie crusts 2 tbsp brandy
8 Gala Apples ¼ cup raisins
2 Granny Smith Apples ½ cup brown sugar
2 tbsp butter ½ cup sugar
1 tbsp vanilla ¼ cup corn starch
2 tbsp cinnamon 1 egg
2 tbsp allspice 1 tbsp sugar for top
1 ½ tsp nutmeg
1 tsp ground cloves
3. Pie Crust Recipe
• 3 cups of all-purpose unbleached flour or use pastry flour
• 1 cup of lard
• 1 cup of ice water
• 1 tbsp of sugar
• 1 tsp salt
4. Directions for pie crust
• In mixing bowl add lard, flour, salt, and sugar
• Add in almost all the water.. Not all of the water
• Mix for 30 seconds and check dough to see if it needs more water.
• If dough is crumbly and dry add one tbsp of water at a time mixing
it in for a few seconds. DO not over work the dough or it will be
tough.
• Dough will still look a little dry but should be quite pliable and
ready to press out onto a floured pastry board. Press down and
then fold over and work by pressing down a few time and then fold
crust over and cover with saran wrap or place in storage bag and
allow crust to rest in fridge for 30-60 minutes.
5. Directions for pie
• Peel and slice apples
• Add brandy to raisins and allow to soak for 15 minutes
• Add cornstarch to apples and coat
• In cast iron fry pan add butter, apples, sugars, vanilla, brandy and
raisins
• Cook over medium heat until apples are almost soft about 15-20
minutes. Make sure to stir often so that apples don't burn.
• Allow apple mixture to cool or it will soften crust too much.
• Then add to bottom crust and then add top crust and tuck into the
bottom crust and then crimp however you like and cut several slits
in top to vent. Then beat egg and brush on crust and sprinkle
sugar and bake at 350 for 60-80 minutes.
