This recipe provides instructions for making Sidra's Spanish Rice. It calls for olive oil, onion, garlic, rice, chicken or vegetable stock, tomato paste or fresh tomatoes, and oregano and salt to taste. The rice and onion are browned in olive oil before adding the stock, tomato, and seasonings. The rice simmers covered for 15-25 minutes until tender. The finished rice is left to sit covered for 5 minutes before serving.
