Review of current state and emerging requirements on sustainable supply chains.
The presentation focused on key themes from the worlds of Product Compliance (product safety and the identification of hazardous chemicals), through to the transition towards modern state Environmental, Social and corporate Governance (ESG), which is becoming increasingly focused towards factual evidence based data reporting, where data needs to be validated at the product level, rather than current state corporate organisational level.
The presentation also looked into 'Greenwashing' as it is a key driver for emerging requirements for evidence based data which is now being demanded by consumers, NGO's and regulators.
Assent would like to thank all participants in the room, who came from a wide range of industrial sectors for the excellent interactive discussion which took place.

A tour of the global ESG standards landscape, 100 days out from COP26, explaining how Inline XBRL, a building block approach to international standards consistency, and independent review of coming mandatory ESG disclosures will change reporting. Presented to the Taiwan Stock Exchange 21 July 2021.
ISO 22000 provides benefits to various stakeholders in the food industry. It establishes consensus agreements between suppliers, users, regulators and other groups to ensure food safety. ISO 22000 certification allows businesses to expand globally and provides consumers assurance regarding quality, safety and reliability. The standard also benefits governments by providing technical knowledge, a basis for legislation, and economic and social advantages like trade liberalization and food security. Overall, ISO 22000 helps minimize food safety hazards across the entire food supply chain.

2. I SOTTOPRODOTTI DI VINIFICAZIONE

In Italia si producono ogni
anno 50 milioni di ettolitri di
vino e mosto con una
quantità di sottoprodotti
enologici pari a circa a 2
milioni di tonnellate.
3. VINACCE
• Fino al 2010 venivano obbligatoriamente conferite in distilleria
per la produzione di alcool.
• In seguito al Decreto n.7407 del 4 Agosto 2010 le vinacce oltre che
essere conferite alle distillerie, possono essere destinate ad usi
alternativi:
– uso agronomico diretto e indiretto
– utilizzo energetico come biomassa per la produzione di biogas
– uso farmaceutico e cosmetico;
– uso alimentare: estrazione di enocianina o produzione di prodotti
agro-alimentari come formaggi, prodotti da forno e prodotti
ortofrutticoli.

9. AUDIT AZIENDALI
Le attività di audit aziendali sono state effettuate su tre target elaborando specifici
questionari:
1. Aziende vitivinicole per indagare il loro interesse e disponibilità economica ad
investire in sistemi di valorizzazione dei sottoprodotti enologici.
2. Aziende alimentari per valutare il loro interesse all’utilizzo delle farine di bucce di
uva.
3. Aziende che già trattano vinacce per la produzione di ingredienti e additivi alimentari
con la stessa finalità del punto 1.

11. La destinazione principale delle cantine di
piccole dimensioni è quella agronomica, mentre
le cantine più grandi prediligono la distillazione.
La maggior parte delle cantine che non ricava
alcun reddito dalla gestione delle vinacce sono
di piccole dimensioni e ne fanno un utilizzo

16. CONCLUSIONI
• Interessante profilo nutrizionale delle farine di bucce d’uva: fibre (39-
47%), proteine (9-11%), minerali e composti antiossidanti.
• Il 68% delle aziende vitivinicole è interessato alla valorizzazione delle
vinacce ad uso alimentare.
• Il 58,8% delle aziende vitivinicole sarebbe disposto ad investire con altri
partner.
• Il 64,8 % delle aziende alimentari non è interessato all’utilizzo di farine di
bucce d’uva.
• Il 55,1% delle aziende alimentari utilizzerebbe le farine di bucce d’uva in
prodotti da forno dolci.
• Le farine di bucce d’uva potrebbero essere prodotte a livello industriale
da alcune aziende vitivinicole e testate nelle aziende alimentari
interessate.
