1. Processing of Ginger Candy

2. Ingredients (1 recipe) Utensils
½ kilo grated ginger Mixing bowl (stainless)
450ml condensed milk Strainer
Confectioners sugar Grater
Rolling Pin
Knife
Chopping board
Wooden spatula
Pastry pouch
Hair net, food gloves, face mask
3. Process:
1. Peel the ginger.
2. Grate the ginger.
3. Squeeze the ginger pulp.
4. Mix the condensed milk and the grated ginger.
5. Cook for 20 minutes or until the desired texture is reached. The longer
the cooking time, the harder the candy is.
6. Pour and spread in the chopping board coated with confectioners sugar.
7. Cut according to the desired shape and size.
8. Place in a pastry pouch.
