2004 – ‘05 The Gleneagle Hotel Killarney
Position: Night Porter/Restaurant Supervisor
Started as a Night Porter with general serving duties and security
Shortly promoted to Restaurant Supervisor with main responsibility the
hotel's a´la Carte restaurant, OD's.
Duties included Cash Handling/End of Day Balance, Rostering, Time Sheets and
general running of the restaurant.
In June 2005 the hotel Group opened a new hotel, Killarney Valley Hotel and I became Restaurant Manager.
Duties included to get the restaurant up and running smoothly, making up Standard Operation Procedures,
purchasing, bookings etc.
2003 – ‘04 The Eviston House Hotel Killarney
Position: Bar Manager/Duty Manager
Duties included all management responsibilities, such as Cash Handling/End of
Day Balance, Staff Handling, Recruiting & Training Staff, Rostering, Ordering,
Stock Control, Promotions and so on. At the same time I was of course working
as a Barman, Waiter, Receptionist and when needed Night porter.
2003 The Granary Bar & Restaurant Killarney
Position: Restaurant Manager
My main responsibility was the general running of the restaurant, but was
also closely involved with the bar.
2002 – ‘03 The Eviston House Hotel Killarney
