yophilization (freeze-drying) is
gaining more and more popu-
larity as the best method to
stabilize perishable products,
and it is making it possible to fight
hunger over-the world by providing dry,
clean, and nutritious products during
times of need.
Lyophilized products are not only
healthy. One of their most attractive
advantages is that their life cycle is
longer than non-processed foods. In
some cases, the product can keep its
original taste, smell, color, and other
characteristics intact for years. They do
not need to be refrigerated, and their
microbiology is even better than that of
non-processed products.
When it comes to meat, vegetables,
fruits, species, etc., it might seem un-
reasonable to discard cooling conserva-
tion. However,when using lyophilization
it can be possible to process these fo-
ods into dried products through subli-
mation -which is the process of trans-
forming solids into gas while at no point,
becoming a liquid. This way,the raw ma-
terial is exposed to extremely low tem-
peratures; so low that the water contai-
ned in the original product can easily be
eliminated by sublimation. It is recom-
