– 8-9% polisacharide on the outer surface of the husk - mucilage
– Cyanogenic molecules – toxic
– Protease inhibitors – inhibits digestion

According to the American Food and Drug Agency:
• there are at least 27 different phytohormons, fatty acids, proteins,
fibres and other beneficial ingredients for human health in flax seed.
• It contains 40-45 % oil, out of this 56-60% is omega3, ALA (alpha-
linolenic-acid) which is highest amount of omega3 in the known
agricultural plants.

• Valuable protein contents which quality is considered to be equal with
poultry oiriginated proteins.

The Technology
• Removing the mucilage through the patented enzymatic
process
• Surface sterilising
• Sprouting (18 – 24 hours) under strictly hygienic conditions.
• Drying
– The germinateds seed are dried very fast in a microwave vacuum
dryer reaching the humidity below 1%. The process takes. app. 1
hour and the temperature must not exceed 550.
– This procedure allows the enzymes to remain in the product.
• Milling and packaging or further processing
• Shelf life
– The product has a shelf life of at least 12 months if it is kept at
under 250 and out of direct sun light
According to this technology flax sprout is relased for human consumption.
