Continuous fermentation uses an open system where fresh media and waste removal occur continuously, maintaining steady-state log phase growth. Fed-batch fermentation uses a semi-closed system where fresh media is added periodically without waste removal, allowing nutrient concentrations to be controlled while volume increases over time.
