                                                              3 baby carrots
                                                              1tbsp mixed spice
                                                              175g dark muscovado sugar
                                                              50g toasted pecans
                                                              150g chopped dates
                                                              150g chopped prunes
                                                              150g raisins
                                                              150g currants
                                                              150g sultanas
                                                              3 eggs
                                                              175g butter
                                                              4 slices crustless white bread
                                                              75g blanched almonds, flaked
                                                              75g self-raising flour
                                                              100ml guinness
                                                              100ml grand marnier

combine all
chopped fruit,
the orange
juice and
carrot, add
guinness &
water leave to
soak for 1 hour
combine the butter, sugar and orange
zest & beat together until fluffy
beat together the 3 eggs & beat the
eggs into the butter/sugar mix,
adding a bit of flour if it curdles
mix up the flour/breadcrumbs/nuts
with the egg/butter/sugar mix

                           add the
                           drunk
                           fruit to
                           the other
                           brown
                           mixture
divide the
mixture
between the
two pudding
bowls
cover your
                     puddings with
                     foil and tie them
                     up

place the puddings
into pans of
simmering water &
cover for approx 6
hours
The flame is from pouring brandy over the
top and lighting it. Warm the brandy
gently over heat in a pan, light it whilst
it's still in the pan and then pour it over
the top.

Make a Christmas pudding
