JOB DESCRIPTION
1. Work at Nui Than Tai Hot Springs Park
2. Take full responsibility for the operation of F&B department.
3. Cooperate with related departments for preparing equipments/
food/items needed for the Function or event.
4. Ensure that consumable and non-consumable goods are
ordered, correctly stored and issued to the various
departments.
5. Be fully conversant with all statutory requirements regarding a
food and beverage operations that all licenses, including
special licenses, are timorously applied for and that the
conditions affecting the issues of a liquor license are not
jeopardized.
6. To be fully aware of trends in the industry and make
suggestions for improvement of the catering operation.
7. Ensure that regular stock takes are conducted.
8. Ensure that staffing levels are correct and to agreed standards
and are not exceeded without prior consultation.
9. Ensure that company and statutory hygiene standards are
maintained in all areas..
10. Attend timely to customer complaints.
11. Hold regular performance appraisals with all management
staff, identifying areas for development and training needs,
and ensuring that this training is effective.
12. To ensure the prompt and efficient service of all meals, snacks,
functions and beverages to the required standards.
13. Ensure that profit margins are maintained, agreed costs are not
exceeded through effective control systems, including
issuing against dockets, sales analysis, menu costing.
14. Ensure that restaurants are clean and well maintained, that
table appointments, including flower arrangements are
impeccable.
2. 15. Ensure that waiters are always correctly and smartly dressed,
that they offer professional and courteous service to their
customers.
16. Ensure that bars are clean and stocked with the stipulated
requirements.
17. Ensure that barmen are well trained, correctly and smartly
dressed and serve their customers in a professional and
friendly manner..
18. Ensure that room service orders are executed promptly and
that they comply with the required standards.
19. Ensure that room service staff are correctly and smartly
dressed and serve their customers in a professional and
friendly manner
20. Ensure the efficient running of the banqueting department and
that all banqueting rooms are clean and tidy.
21. Hold the weekly/ monthly engineering department meeting.
22. Provide more training for staffs to improve their skills.
23. Control the materials, inventory at engineering store and do
the purchase request.
24. Produce a monthly report to GM.
25. In cooperation with HR Manager for hiring or dismissal
engineering personnel as resort policy
26. Make the budget of F&B department operation with GM and
FC.
27. Complete other duties as assigned by General Manager.
28.EXPERIENCE, EDUCATION BACKGROUND
29. Work Experience: At least 3 year experiences as FBM at 4/5
star hotel; good relationship with FO, F&B, ACC, SEC,
M&E and Human Resources
30. Education: International Hotel background
31. Certification/License: Yes
32. Training: On-going knowledge of Food & Beverage
3. technologies.
33. Other: Have ability to communicate in the English language,
both verbally and in writing. Be able to communicate
effectively at all levels. Be able to use computer
