Poultry fabrication techniques are similar across the different classes from chicken to turkey, and duck. Turkey legs have more tendons in their legs, along with harder bones and cartilage. Ducks and geese have dare dark meat birds with less breast meat. 2. Marsh Daisy

CHARACTERISTIC:
The Marsh Daisy is a hardy, economical
barnyard chicken, but is slow to mature. It is a
lightweight breed of standard fowl, with males
at a maximum of 2.95 kilos (6.5 pounds) and
females 2.5 kilos (5.5 pounds). A good forager,
it prefers being kept free range. Though
generally calm, it is active and can fly.

4. NAKED NECK

CHARACTERISTIC: It has no feathers on
the neck or face, giving it a very unusual
appearance. The skin turns red in the sun,
making it look rather like a turkey. The rest
of the feathers are also less in number
than other chicken breeds, and they come
in a variety of colors, such as black,
cuckoo, white, red, blue and buff.
5. JERSEY GIANT
ORIGIN: UNITED STATES
CHARACTERISTIC: A large amount of food
and time is required for the Jersey Giant to
reach its full size. The Jersey Giant is a calm
and docile breed. The cocks are rarely
aggressive. The hens lay very large brown
eggs, and are fair layers overall, known
particularly as good winter layers. The birds
are robust and fairly cold-hardy. The breed's
plumage comes in blue as well as black and
white.

ORIGIN: CANADA
CHARACTERISTIC: A fairly large
bird, with weights for adult birds in
the range 2.7 to 4 kg (6 to 9 lb). The
body is of medium lAength, broad in
the back and with a deep, full and
well-rounded breast. It is clean-
legged and fairly close-feathered,
and has a broad skull with a rose
comb.

ORIGIN:SOUTHERN
ENGLAND
CHARACTERISTIC: Their combs, face,
wattles, and earlobes are bright red, and their
skin, legs, feet and beak are yellow. Although
categorized as a dual-purpose breed, these
birds are first and foremost egg producers with
hens historically averaging 230-275, light-to-
dark brown, medium-size eggs a year.

CHARACTERISTIC: Have red-orange
eyes, reddish-brown beaks, and yellow
feet and legs, often with a bit of reddish
hue on the toes and sides of the shanks.
Chicks are a light red to tan color. The
roosters usually weigh in at about 8.5
pounds (3.9 kg), the hens average slightly
less at 6.5 pounds (2.9 kg).
