FRONT AND BACK OF THE HOUSE
Definition of Terms
• FRONT OF THE HOUSE
The front of house is the area where diners sit.
• BACK OF THE HOUSE
The back of house is the staff area, where cooks and other support staff
work to prepare food.
Front-of-the-House Functions
-Front-of-the-house refers to the area in a hospitality business that guests usually see.
-In a restaurant, the front-of-the-house usually includes:
“Lobby or entrance
“Hostess/ Host stand
“Dining Room
-Front-of-the-house employees work directly with guest.
The front-of-the-house is responsible for the
following six functions:
1. Seating guest
2. Selling food
3. Transmitting orders to the kitchen
4. Serving customers
5. Bussing tables
6. Obtaining payment from customers
Back-of-the-HouseThe back-of-the-House
(BOH)
• Is the area in a hospitality business that guests usually do not see.It is also
called the heart-of-the-house.In a restaurant these areas include the:
Kitchen
Receiving Area
Storage Area
Business Offices
The back-of-the-house is responsible for the
following seven functions:
• Food Production
• Purchasing and Receiving
• Marketing and Sales
• Human Resources
• Accounting
• Security
• Engineering and Maintenance
