Cultivated Meat: The Future
world's food?
Home-grown meat is produced from a
Petri dish and is also referred to as "in
vitro" meat . Its main nature is that it does
not come from animal sacrifices, but that
it is created completely in a laboratory. In
the English language the favorite term is
"shmeat", which refers to a type of
artificial meat.
This new way of producing food has
brought to the table nutritional, ethical
and logistical aspects that promise to
serve a new information dish to the
general public.
The science and
manufacture behind
The scientific work begins using live animal tissue stem cells,
then proceed to feed or grow in an environment created by a
bioreactor for the fortification of its growth and a series of
nutrients to give its characteristics similar to normal meat. At
the moment when sufficient cells have been provided, the
creation of compounds in which these muscle cells can
adhere is proceeded. The electro-stimulation is then used to
elongate these cells, as happens with the flexing of natural
muscle cells. The idea is to continue with the usual
development until there are already living proteins in the Petri
model.
In the first tests dedicated to creating a final product
identical to the meat - for its later commercialization -
different ways of modifying the structure and
appearance of this cultivated meat were used. The
famed Doctor Mark Post, head of research at the
University of Maastricht in the Netherlands, required the
cultivation of about 20 thousand pieces of beef muscle
tissue. In his final assertions, he stated that although the
fat part is not yet available, the taste was perfectly
similar.
However, the advances has been progressive and
still can not expect a taste and appearance equal
to that of meat. To achieve the creation of a
complete fillet of meat ready for human
enjoyment, blood vessels are required that can
feed cell by cell, as well as the creation of fats that
support the muscular tissues. So far, we do not
have the technology to have the process
completely.

Nutritional values of cultivated
meat
Vegans, vegetarians and activists who defend
cultivated meat argue that their nutritional values
can be even more complete than those of real
meat. Its foundation is that meat can be created
from pure protein, without the need to use animal
fat. As it is created in a Petri dish, they also argue
that healthier fats such as Omega 6 and Omega 3
can be added.
Its most significant contribution in the defense of
cultivated meat is that it would avoid
contamination of the compound such as
dangerous bacteria such as Salmonella and E
Coli. Certainly one of the great risks of traditional
vaccine production is the contamination of
refrigerators, especially those that do not have
strict sanitary measures. In the case of cultivated
meat, this problem would be eradicated forever.
Main concerns about
cultivated meat
Of course, all production of artificial
compounds for consumption has its
detractors, with very good foundations.
There is first-hand concern that precise
controls are not achieved in logistics and
production processes, especially on
sanitary controls. Many scientists state that
the environmental and nutritional impact
for the human being would be harmful in
the long term.
On the other hand, the production cost of this artificial product is
quite high, without mentioning the investment necessary to
produce it for mass consumption. Technological equipment and
human labor would require a multi-million dollar investment and
certainly not any food company is willing to take such a high risk.
There is a lack of testing in large processors and production facilities
and costs in services such as water and electricity.
Regarding the use of electricity service, many
environmentalists are wondering if it would simply be
replacing one problem with another. In order to avoid
the slaughter of animals by compound food, the
problem of exploitation of the environment for the
generation of sufficient energy with this project would
be exploited. A cultivated tissue of meat requires
attention and cooling and heating processes 24 hours a
day, which would result in a high electricity bill.
At the dietary and nutritional level, the main concern is
whether it will provide all the proteins and nutrients that
the human being needs to consume from the meat. The
variety is vast and we would have to constantly redesign
the models while testing their effectiveness in human
health. It would take years to reach a formula efficient
enough to consider dispensing entirely with the
consumption of animal meat.
"There are many ethical, logistical and medical aspects
that must be taken into account to even suggest to a
society a radical change in their diet. It is the active
responsibility of the scientists in charge of these projects
for transparency with their investigations and the
avoidance of falling into games of radical groups that
seek change without benefit. If the cultivation of meat is
the future of human nutrition, we can not wait for the
next step to take. "
