This study aimed to develop a nutritious chocolate product incorporating banana blossom at different levels (10%, 20%, 30%). Banana blossom is high in nutrients like fiber, protein, potassium, iron, magnesium and vitamin E. Sensory evaluation was conducted on chocolate samples with different levels of banana blossom addition. The 20% banana blossom chocolate received the highest scores for color, aroma, texture, taste and overall acceptability. Thus, banana blossom can be incorporated up to 20% to develop a nutritious chocolate while maintaining good sensory quality.
