This recipe is for a Christmas coconut cake with a tutti frutti filling. It has four egg whites that are beaten with sugar and then folded into a batter made from flour, sugar, baking powder, salt and shortening mixed with milk. The batter is poured into two greased pans and baked for 35-40 minutes. Once cooled, the layers are filled with a tutti frutti mixture of egg yolks, sour cream, sugar and chopped nuts, raisins and cherries. The cake is frosted with whipped cream and can be served or refrigerated.
