PREAMBLE
Chocolate is very good for heart. Every connoisseur know that chocolate can be either
bitter or sweet chocolate manufactured from cocoa. Chocolate is derived from the
cocoa bean, one of the most concentrated sources of flavone’s, a subgroup of the
natural antioxidant plant compounds called falconoid, found in tea ,red wine,
tomatoes, and other foods believed to reduce the risk of cardiovascular disease.
The cocoa bean- the heart of the sweetest delicacy in the world- is bitter. Many types
of processed cocoa products, mainly chocolate, are available today: dark chocolate,
which contains the highest concentration of cocoa; milk chocolate with a lower
concentration of cocoa; and white chocolate. On the basis of this broad distinction,
the health benefits ascribed to chocolate relate nearly exclusive to the dark,
bittersweet- tasting chocolate and to products with a cocoa content of 60% or more.
This is why, up to 18th century some native tribes ate only the sweetish flesh of the
cocoa fruit. Cocoa trees can, in fact, grow to a height of 50 feet but, to simplify the
harvesting of the crop, they are usually pruned back to a height of 20 feet or so.
Chocolate is a very delicious and very liked by children and teenagers. The business
of chocolate industry is very booming and growing business. Chocolate go through
different process than convert from cocoa to chocolate. Chocolate is the third highest
daily source of antioxidants, preceded by coffee and tea.

LEGAL ASPECT OF BUSINESS
What legislation applies to a chocolate making business?
If we are starting a new business, rather than taking over an existing one, we will need to
obtain planning permission from the local planning authority.
Fire Safety
All employers must comply with fire safety regulation – this means carrying out a fire
risk assessment at your premises and putting in place fire precaution measures. These
could include fire alarm system and extinguishers as well as clearly signed escape routes.
If we have fivponsie or more employees our fire risk assessment must be written
down .We’re responsible not only for the safety of our staff but also of anyone who might
be on our premises, like customers or suppliers. The Department for communities and
local Government have produced several helpful guides for business.
Health and safety
We must make sure that you comply with legislation covering all aspects of work place
health and safety. Any businessmen have a duty to ensure the health and safety at work of
our self and any employees. If we have more than five employees we must prepare a
written health and safety policy statement. Specific regulation covers such things as the
safety and maintenance of equipment –such as hand and power tools - and the use of
protective gear when appropriate. We should contact our local environmental health
department for advice and guide.
Hazardous Substance
A chocolate make might use various hazardous substance and specific regulations cover
their use, storage and disposal .Ensure that any employee’s exposure to potentially
harmful substances is minimized. This might involve precaution such as using gloves to
limit exposure of the skin to cleaning chemicals. Hazardous substances must also be
stored correctly.
Data Protection
If we keep records of customers’ details, we need to register with the information
commissioner.
