Chicken Fried Steak

  1. 1. Chicken-Fried Steak<br />

Ingredients<br />2 ¼ tsp. salt, divided<br />1 ¾ tsp. black pepper, divided<br />6 (4 oz.) cube steaks<br />38 saltine crackers (1 sleeve), crushed<br />1 ¼ cups flour, divided<br />½ tsp. baking powder<br />½ tsp. ground red pepper<br />4 ¾ cups milk, divided<br />2 large eggs<br />3 ½cups peanut oil<br />
  3. 3. Sprinkle Salt & Pepper over steaks<br />
  4. 4. Combine Cracker Crumbs, flour, baking powder, salt, pepper & red pepper<br />
  5. 5. Mix ¾ cup milk and eggs<br />
  6. 6. Dredge steaks in cracker mixture, dip in milk mixture then cracker mixture again<br />
  7. 7. Heat oil in 12-inch skillet to 360˚ <br />
  8. 8. Fry steaks...<br />
  9. 9. …each side about 4-5 minutes.<br />

  11. 11. Carefully drain oil, reserving cooking bits and 1 tbsp. drippings in skillet<br />
  12. 12. Mix ¼ cup flour and 4 cups of milk, salt and pepper<br />
  13. 13. Pour mixture into reserved drippings in skillet<br />
  14. 14. Whisk constantly, 10-12 minutes or until thickened<br />
