- Are made from flatten often
unleavened breads.

Bread
Pita or pitta also known as Arabic bread, Lebanese
bread or Syrian bread, is a soft, slightly leavened
flatbread baked from wheat flour that originated in the
Near East, most probably Mesopotamia around 2500
BC. Wikipedia
Comes in both white and whole wheat. As the flat
bread bakes, it puffs up, forming a pocket that is perfect
for stuffing.
How to Make Homemade Pita Bread
Ingredients
1 cup warm water (not hot or boiling)
2 teaspoons active dry or instant yeast
2 1/2 - 3 cups all-purpose flour
2 teaspoons salt
1-2 teaspoons olive oil (optional)
Equipment
Mixing bowl
Rolling pin
Cast iron skillet (for stovetop baking)
Lavash
Lavash, sometimes referred to as Armenian lavash,
is a soft, thin unleavened flatbread eaten all over the
Caucasus, Western Asia and the areas surrounding
the Caspian Sea. Wikipedia
Lavash is thin bread that can be soft or crispy.
Because of its thin, crispy texture lavash is also called
"cracker bread."
Small and rectangular, when softened in water, can
be rolled around a stuffing to make a pinwheel shaped
sandwich.
INGREDIENTS
 2 3/4 cup all-purpose flour
 1 teaspoon table salt
 2/3 cup + 1 tablespoon water
 1 egg
 4 tablespoons extra virgin olive oil
