1. An Appellation Where the Wine Is from
The Chile Cabernet Sauvignon is from an appellation located
in the Colchagua Valley. The valley stretches from the
Maipo Valley to the southern end of the Maule Valley.
The wine’s region is Central Valley and its sub-region is
Rapel.
The complementary areas of this region are Costa,
Entre-Cordilleras, and Andes. The region is also known as the so-called “Huaso”, which
represents Chilean cowboys. When it comes to high quality red grape varieties, this is the
best region of Chile’s wines. The soils are clay, sandy, and decomposed granite, and the
climate is Mediterranean with 592mm of rainfall per year. The famous wines in this
region are Cabernet Sauvignon, Carmenere, Syrah, and Malbec (“Wines of Chile”).
2. A Brief History of the Winery
The wine’s vintage is 2013, and was aged in American oak barrels. As a brief
history, Diego Garcia de Caceres planted the first vineyards in 1554 in the northern part
of Chile. The cultivation of vineyards had been increasing as they were moving to the
south since 1555. Chilean wines competed with European wines internationally and
rapidly increased between 1784 and 1789.
This wine was founded in 1883 by the producer, Viña Concha y Toro. The founder
of Concha y Toro is Don Melchor. Melchor is the leading producer of wine companies,
and owns 135 hectares of vineyards. It has been more than 120 years since this wine

3. Style of Wine
It is a dark and ruby red wine with aromas of black currant, and dark plums. The
Cabernet Sauvignon has a dark red fruit flavour, so it is positioned between Pinot Noir
and Syrah (“The Guide”).
4. Flavour Profile
This wine is medium-bodied with silky tannins. It has layers of cassis and black-cherry
fruit with a touch of spice and vanilla oak. When it comes to the taste, this wine also has
a delicious hint of coffee and dark chocolate. In the finish, there are some medium-high
tannins in mouth (lcbo.com).
5. Two Possible Food Pairings
This wine can go with robust dishes, such as red beef, pasta, and cheese. It can also be
paired with high fat foods. For example, the wine can be drunk with a charred gruyere
burger, a mushroom pizza with tomato sauce, or some marinated rib eye steak.
