10. TRIVIA ABOUT ATCHARA
Atchara was influenced from India, with the dish
Achaar (a dish with varieties of fruits and vegetables)
which means “pickle”.
The Pickling process was used as a solution to
preserve excess food for seasons when there was a
lack of food production.
11. What type of food
preservation is atchara?
The Philippines is home to a very unique form of
atsara, a sour condiment that is served with fried
meat.
Atsara is made from shredded, unripe papaya. Its
pickling process is similar to the Malay and Indian
varieties, but the Filipino version uses green papaya as
its main ingredient.

• 50 grams of carrot thinly julienne
• 50 grams of red bell pepper julienne
• 10 grams of garlic sliced
• 20 grams of onion sliced
• 500 grams of vinegar
• 1 ½ cups granulated white sugar
• 4 tablespoon of salt
• 1 teaspoon salt
• 1 teaspoon black pepper
21. 1. Combine grated papaya and salt. Mix until salt dissolves.
2. Place the grated papaya on a cheesecloth or clean towel.
Squeeze out the liquid from papaya and set aside.
3. Put the vinegar and sugar into boil. Then, add sugar,
salt, and pepper. Cook the vinegar until it lessens the
sour smell.
4. Mix carrot, red bell, pepper, onions, and garlic with
papaya.
5. Put the mixed vegetables into jar and pour it with syrup.
