Funghi Espresso is an Italian startup that grows mushrooms using coffee grounds collected from local bars in Florence. They produce fresh mushrooms and mushroom cultivation kits for home use in a sustainable way that reuses a byproduct. Funghi Espresso encourages urban farming and a circular economy by locating production near cities to reuse coffee ground waste and provide locally grown, nutritious food.

Funghi Espresso is an innovative startup, which produces
fresh mushrooms in a sustainable and natural way, using the
coffee grounds from the bars in Florence as a substrate for
the cultivation.
In addition to the production of fresh mushrooms, Funghi
Espresso is specialized in the production of substrate ready
for mushroom cultivation (kit for home production).
3. Funghi Espresso is a project in collaboration with Centro di
Ricerca Rifiuti Zero of Capannori (LU) municipality.
Start in 2014, when Rossano Ercolini (President of Zero Waste
Italy association and Goldman Environmental Prize 2013) opens
the case study ”reuse of coffee grounds in agriculture",
presented in the showroom “The taste of a sustainable coffee”.
6. The model is inspired by the Funghi Espresso is Blue
Economy theory (developed by the economist Gunter Pauli),
where the waste of a production cycle is reused in other
production cycles, in an “waterfall” effect. The production
systems therefore are not seen in a distinct and separate from
each other, but in an integrated way, where the waste from a
production cycle may be recovered or recycled in another
production cycle to generate new energy, new wealth and new
work.

7. Funghi Espresso, encourages reuse and introducing the concept of "Urban Farming",
where agricultural production is located near the city, in order to reuse the waste that it
produces (coffee grounds ) and give the city the same food with high nutritional value,
such as mushrooms.
Funghi Espresso is a system where there are no waste but resources.

16. Locale fruttificazione funghi
We use coffee ground as growing media, combining it with
the “seed” of the mushroom. All in a completely natural
way, without the use of chemical products. We grow our
mushrooms vertically, suspended on supports, reducing
land use: compared to traditional crops, we use half the
space to grow the same amount of mushrooms. The
bottom of coffee does not need to be pasteurized, with a
considerable saving of energy. And after use return to the
soil as a compost.
