Its apperance and taste are like sugar.
It is stable at cooking temperature.

It is 600 times as sweet as sugar.

94. 1.A molecule of soap has two parts, a long
hydrocarbon chain and water soluble part.
2.When soap is added to an oily or greasy part of the
cloth or vessel, the hydrocarbon par of soap
dissolve in oil.
3.The water soluble part remains away from the oil.
4.Big molecules of oil and soap break by rubbing into
small emulsified oil droplets.
5.These oil droplets are washed away by stream of
water.
6.Soap and detergent have similar mechanism.
