YOGURT

ORIGIN OF YOGURT
• The country of origin of yogurt is present day Turkey
• Yogurt can be dated back to the third millennium
• Yogurt was created as a way to conserve milk. Turkish goatherds would first leave the
unused milk in the sun to dry. Then they would put the dried milk in sheep or goat skin
bags. The result was yogurt.
• The word yogurt is derived from the Turkish word “yogurt”, which means “to thicken,
to be curdled or coagulated”.
RAW INGREDIENTS
• Milk
• Sugar
• Bacteria culture:
– Lactobacillus bulgarians
– Streptococcis thermophilus
STEPS FOR MAKING YOGURT
• To make yogurt you must first get half
a gallon of whole or 2% milk. I used
2% milk.
• Then you must heat the milk until it
reaches 180 degrees
• Once the temperature is reached, you
can put the milk in a jar to cool until
the temperature drops to 115 degrees
STEPS FOR MAKING YOGURT
• Then you must add the cultures. It is
easier if you add two tablespoons of
already made yogurt. Stir to milk
ingredients.
• During fermentation the milk and
added bacterial culture react to form
curd. The reaction is also what causes
milk to change its flavor to the yogurt
taste. Then the lactic acid helps make
the substance to the yogurt
consistency.
STEPS FOR MAKING YOGURT
• After mixing you can but the jar in the
oven for 12-24 hours with the light on
as incubator.
• Then put the jar in the refrigerator to
cool
• Once it cools take the jar out and
enjoy your yogurt.
SIMILAR FOODS TO YOGURT
• During ancient Greece (A.D 129- 200)
oxygala was a dairy product belived to
be a form of yogurt Oxygala was a
thicker consistency and was usually
eaten with honey.
• Ancient Indian record state that they
ate a combination of yogurt with honey
which they called “The food of the
gods”.
RECIPE: PARFAIT
• First grab a cup to fill in the ingredients
• then add a cup of yogurt to fill the bottom
of the cup
• then add a layer of granola or cereal
• then add a layer of fruit of your choice
• keep adding the layers until you reach the
top of the cup
• You can decorate the top
• Enjoy your parfait!
