This document discusses using coffee residues as substrates for cultivating shiitake mushrooms. It describes the various types of coffee residues including husks, pulp, and spent grounds. Coffee husks and pulp contain high levels of harmful substances like caffeine and tannins that inhibit mushroom growth. Spent coffee grounds contain low levels of these substances and do not require pretreatment. Methods for pretreating husks and pulp include boiling in water, fermenting with microorganisms, and using oyster mushrooms to absorb caffeine. Formulas for mixing pretreated coffee residues with supplements like sawdust are provided. The process of filling bags, sterilizing, inoculating, fruiting and harvesting is then outlined.
