Taliwang chicken is a food that was originally
only served to the Mataram royal family, but
nowadays it has become a food that can be
accessed by anyone. Taliwang chicken is
made from young free-range chicken with
spices such as shallots, garlic, curly red chilies,
curly cayenne pepper, shrimp paste, kencur,
tomatoes, salt, and lime. This food has two
versions, namely grilled and fried. What
makes this food unique is the way it is cooked
which is still traditional, using firewood to
give it a distinctive taste.
AYAM TALIWANG
A serving of Nasi Sukaraja consists of several
side dishes such as vegetables, chicken and
tempeh. The taste of this side dish is very
different from other rice dishes. This is
because it has a variety of vegetables and
side dishes that are processed with special
spices with coconut milk so that it tastes more
savory. In addition to the side dishes, in
cooking rice also uses a wood-fired stove
which makes the aroma more fragrant.
NASI SUKARAJA
This food is daily food. This food can be
found everywhere because it is easy to cook
so it can be cooked at home or can be found
in restaurants. This food consists of eggplant,
long beans and shallots. All ingredients are
cut into pieces and doused with a special chili
sauce made from cayenne pepper, garlic,
shallots, shrimp paste, sugar and salt.
Eggplant duck is sometimes served raw or just
steamed. In addition to being a side dish, this
food is a companion for Taliwang chicken
BEBERUK TERONG
In general, satay is made from mutton or
chicken, but this satay is made from beef. The
process of making beef is cut into pieces, then
ground to make it tender. Then the meat is
seasoned with garlic, red chili, brown sugar
and shrimp paste. After the spices seep, the
satay is burned to dry. What is unique about
this dish is that the satay is served plain
without any seasoning, because in the
previous process the meat had been
marinated for 2 hours so that the seasoning
had seeped into the meat.
SATE REMBIGA
This dish is famous for its spicy taste. The
main ingredient for making this rarang
chicken is young free-range chicken. Then the
chicken is grilled with firewood until half
cooked, before being covered with spices.
For seasoning, chicken rarang has a secret
ingredient, namely sabiye gero or cayenne
pepper which is dried in the sun. Because the
process can create a distinctive spicy taste
and make it different.
