Eating is as fundamental to us as breathing. Itis
very important, however, to learn good
manners, as they help to smooth our way in the
company of others.
The way we eat gives away
a great deal about us: this
very public exhibition is
impossible to hide and says
more about us in one
mouthful than our entire
CV. One faux pas too far
and all could be lost and ,
believe me, it’s amazing
what a knife and fork will
betray!
Nowadays, if you exhibit bad table manners
you might just as well have a flashing sign
around your neck that says, ‘look at me ,I am
drawing attention to myself; I don’t know how
to behave, and I am socially inept.’
This video is designed to help ensure you’re not
one of these dreaded dining companions. If you
follow the ways set out, you will be able to sit at
any dining table with total confidence, safe in
the knowledge that you know what to do.
Before we proceed, it is important to
understand that the points discuss in this video
are related to the service given in high end
restaurants which are normally done by
professionals with background of hospitality.
Let’s Start
Before you go to a restaurant , it is always better
if you book the table in advance so that you can
get a table of your choice. It is also good to find
out the dress code of the restaurant or event in
order to avoid embarrassment.
In the Restaurant
• Always wait to be seated by the host or
hostess of the restaurant
Before taking a seat, you should handover any
kind of coat or umbrellas to the hostess. One
should resist to hang them at the back rest or
arm rest of the chairs.
• The man should always make the lady sit first
by pulling the chair and taking the seat after
the host has done so.
• In a fine dining restaurant , one should never
rest his elbows on the table and also should
not lean on the back rest.
One should wait for the server to come on the
table with the menus, if in case delays happens
than try to make an eye contact with the server.
• Try not to speak to the
server in his native
language unless and
until you are absolutely
fluent: the server is
bound to humiliate you
by answering in English.
• Never be rude or
patronising to the
people serving you.
• Let the host on the table decide for that bottle of
wine. One should be considerate enough as to
not order extravagant alcoholic beverages and
not to get drunk in the meals hosted by others.
• Please do not leave the food half-way. If in case
you have to go to washroom, than finish the
course and kindly excuse yourself.
• When the host is giving a speech, one should
resist having a conversation with the person
sitting next on the table.
• Chewing the food with mouth open is just
unacceptable.
• If you do not know how to use chopsticks than
it is better to stick to knife and fork.
• Do not ask for an ash tray on the table.
• If you do not like the food, don’t make a fuss ;
it is perfectly acceptable to leave it.
• Please do not use tooth pick on the table. Go
somewhere to probe the teeth in private.
The Table and the Service
• It is good to know that for every person sitting
on the table , a space is assigned in which all
the cutlery, crockery and glass ware for the
person is arranged; this space is known as
COVER. So, a table of two will have two
covers.
• The cutlery, crockery and glasses are always
placed in particular order with the glasses on
right and bread plate on left.

• The arrangement of the cutlery will be
according to the courses served with the
cutlery for the first course on the outermost .
• Depending up on the establishment, the
server may lay down fresh cutlery for every
course. Just observe the flow of the service in
order to get comfortable with it.
• Your napkin will either be kept on the center
of your cover or on the left of your cover.
Service
• The service of food and beverage follows a
particular order which are:-
• Beverages:- Beverages are always served from
the right.
• Food:- If pre-plated , than served from right; if
platter to plate(silver service) than served
from left.
• Clearance can be done from any direction.

• Whether you are eating or finished having the
food, your server will come to know if you
leave the cutlery in the following fashion.
The correct way to hold a knife and
fork
• Never cut bread or bread rolls. Break the bread
with your fingers and butter it using butter knife.
• Each time you take a mouthful , lean over the
plate; if anything falls, it will land on the plate and
not in your lap.
• Never put used cutlery back down on the table.
• Only your fork goes in to your mouth; your knife
is used to cut and as a pusher but never enters
your mouth.
• Your cutlery should be placed on your plate and
never ‘gang-planked’ at an angle from the table
to the plate. Do not leave half-eaten food on the
plate when you put it down
Napkin
• The main function of napkin is to
protect your clothing's from
spillages and dropped pieces of
food during meal.
• Once seated, unfold your napkin
and place it over your lap and,
unless you are using it , keep it
there until you have finished
eating.
• One should never actually wipe
around the mouth but simply
dab the corners of the mouth to
remove crumbs.
• If you need to get up and leave the table for any
reason, leave your napkin on your seat.
• If you drop your napkin during proceedings, it is
OK for you to pick it up. You may also be offered a
replacement by your server.
• At the end of the meal and when everyone else
has finished, you should gently refold your napkin
and place it to the left of your plate; never leave
it crumpled and on the plate.
Glasses
• The drinking glasses are arranged in a certain
pattern, with the taller glasses furthest away, so
that you can pick up the shorter glasses at the
front without having to reach awkwardly over the
higher ones.
• The water glass will probably be placed in line
with the top of the main course knife.
• A wine glass should be held by its stem, which
prevents the hand warming a cool wine.
• You should never be given or serve a full glass of
wine.
Some don’ts for the table
• Don’t eat chicken legs or chops with your fingers
• Don’t overload your fork and shove huge amounts into
your mouth in one go.
• Don’t eat as if you have moments to live; always eat
slowly.
• Don’t eat with your elbows stuck out like wings; keep
them by your side.
• Don’t point with your cutlery
• Don’t hold onto your fork while drinking
• Don’t polish the cutlery with your napkin; if the
utensils look grubby, ask for replacements.
• Don’t gulp at drinks; it looks desperate and
greedy
• Don’t get drunk; you will look absurd
• Don’t blow on hot food or drink to cool it; just
wait until it has reached a comfortable
temperature.
• Don’t apply make-up using a mirror after eating;
do it in private please.
• Don’t get off your seat to reach something; ask
for it to be passed to you.
Some Hints :-
• De-juice a lemon wedge by holding it over
your dinner and twisting the prongs of your
fork into the flesh.
• Eat quietly; the essence of table manners is
unobtrusiveness.
• Take one canape at a time, not a handful; it is
the server’s job to make sure you are offered
more.
• Never wipe your hands with the table cloth.
Eating should be fun and not a time for
worrying about which knife and fork to
use, and the easiest way to allay those
fears is to learn how to eat with style and
