During the Roman Empire, Via Egnatia was one of the most important roads stretching from Rome southeast across Italy to the coastal town of Egnazia. 2. To Χαλούμι
Όπως και η φέτα, έτσι και το χαλούμι είναι ένα τυρί διεθνώς αναγνωρίσιμο και αγαπητό. Σε πολλές χώρες θα το δούμε
ψητό, να ‘’στολίζει’’ πράσινες σαλάτες ή να γίνεται σαγανάκι και να θεωρείται όχι και άδικο αλλά εκλεκτό έδεσμα. Είναι το
παραδοσιακό τυρί της Κύπρου και τρώγεται συνήθως ψητό, σαγανάκι ή ακόμα και ωμό σε σάντουιτς. Συνοδεύει εξαιρετικά
ντόπια λουκάνικα μαριναρισμένα σε κρασί.
3. Σεφταλιές
Οι σεφταλιές μοιάζουν με μικρά κεμπάμπ, αλλά στη γεύση είναι κάτι πολύ περισσότερο και νοστιμότερο από αυτά.
Πρόκειται για μικρά μπιφτεκάκια από αρνίσιο ή χοιρινό κιμά (ή ακόμα και από μίξη των δύο ειδών), ζυμωμένο με μπόλικη
κανέλα, μαϊντανό και κρεμμύδι, που στο τέλος τυλίγεται με αρνίσια μπόλια. Ψήνεται ονειρεμένα στα κάρβουνα αλλά και στον
φούρνο και είναι από τα πιάτα που πρέπει να δοκιμάσετε, αν δεν το έχετε κάνει ήδη.
4. Καλοκάσι
Το κολοκάσι είναι μια ρίζα αντίστοιχη της πατάτας, που είναι πολύ αγαπητή στο νησί της Αφροδίτης. Και στην Ελλάδα
βρίσκουμε συχνά κολοκάσι Κύπρου, αλλά εδώ δεν το εκτιμούμε και τόσο πολύ ως έδεσμα. Στην Κύπρο, το κολοκάσι
καλλιεργείται και μαγειρεύεται από τα ρωμαϊκά ακόμα χρόνια. Συνήθως γίνεται γιαχνί στην κατσαρόλα, μαζί με χοιρινό ή
κοτόπουλο, ντομάτα, κρεμμύδι και σέλινο, ενώ πολλές φορές γίνεται και με πατάτες αντί για κρέας.
5. Ραβιόλες
Οι ραβιόλες είναι μια γευστική «παρακαταθήκη» των Βενετών, από τον 15ο αιώνα. Μοιάζουν με τα ιταλικά ραβιόλια, αλλά
είναι πολύ μεγαλύτερα σε μέγεθος, γεμισμένα με χαλούμι και βρασμένα σε ζωμό από κοτόπουλο. Σερβίρονται σε πιάτο της
σούπας, με μπόλικο ζωμό, τριμμένο χαλούμι και φρέσκο δυόσμο.
6. Πατάτες αντιναχτές
Είναι από τα πιο γνωστά και αγαπημένα φαγητά της κυπριακής κουζίνας, που σερβίρονται σε εκλεκτά οικογενειακά
τραπέζια και καλέσματα. Είναι μικρές πατάτες με τη φλούδα τους, βρασμένες σε άφθονο λάδι και μόλις ροδοκοκκινίσουν,
αφαιρείται το λάδι και ‘’τινάζονται’’ μέσα στην κατσαρόλα μαζί με μπόλικο χοντρό αλάτι και ξερό κόλιανδρο για να
αναμιχθούν καλά τα υλικά. Από εκεί άλλωστε προκύπτει και το όνομα «αντιναχτές». Πολλοί σβήνουν στο τέλος και με λίγο
κόκκινο κρασί για το άρωμα.
