My Favorite food is ‘soto ayam’. It has yellow broth and is composed of
chicken meat, mung bean, vermicelli, hard-boiled eggs, and topped with koya (a
powder of mixed prawn crackers and fried garlic). Tumeric is added as one of the
ingredients to get yellow color of the chicken broth.
Let me tell you how to make a delicious soto ayam. First, heat a tablespoon
of vegetable oil in the wok over medium heat. Stir-fry the ground spices, lime leaves,
and lemongrass until fragnant. Then, remove them from the heat.
Next, boil the chicken and ground spices in a big pot until the chicken is
cooked. After that, take out the chicken from the pot and set it aside. Add chopped
green onions into the soup. Fry the chicken for a while in vegetable oil in a frying pan.
Remove it from the heat and shred the chicken.
Last but not least, place some white rice, some mung bean, vermicelli,
chicken meat, and some hard-boiled eggs in a bowl. Pour the hot chicken broth into the
bowl. Add some lime juice into the soup and koya topping on top. Yum!
