Minahasan Traditional Food 
A. Tinutuan 
Tinutuan / Manado porridge is a typical Indonesian food from Manado, North 
Sulawesi or Minahasa. Tinutuan is a mixture of various kinds of vegetables, but 
there is also often add tuna. 
Tinutuan usually served for breakfast. 
History of Tinutuan: 
Tinutuan word of unknown origin, since when tinutuan be typical food Manado is 
also not clearly known. Some say began bustling trading since 1970, but some are 
saying since 1981. 
Tinutuan used the motto of the city of Manado since the leadership of Mayor 
Jimmy Rimba Rogi 2005-2010. Replaces the previous motto of the city of 
Manado "Wise Man". 
Manado city government through the local tourism office in 2004 to make the 
region as a tourist destination Wakeke tinutuan. 
Ingredients to make Tinutuan: 
- Pumpkin - Kale 
- Rice - Leaves Gedi 
- Cassava - Corn 
- Spinach - Basil 
Tinutuan usually served with anchovies, meatball nike, roa fish sauce, tuna / tuna 
smoked, fried tofu, and corn fritters. 
Tinutuan can also be served with noodles. 
B. Cakalang Fufu 
Skipjack tuna dish fufu is processed in the season, in the smoke, and clamped 
with a framework of bamboo. 
This meal is a typical dish of Minahasa, North Sulawesi, Indonesia. 
Process Cakalang Fufu: 
After the tuna (tuna) cleaned with scales and discarded offal, meat tuna cut 
into two and clipped by a bamboo frame brace that had been prepared 
beforehand. Fish meat is mixed with salt and seasonings wrapped soda. Then 
tuna undergo the process of curing the heat of the fire and smoke. Heat must 
be evenly until meat tuna was overcooked and dry. This process spent 4 hours to 
2 hours for curing and cooling. 
This process goes on until the meat tuna changes color to red with a bit of a 
soft and dry texture.
If processed properly, skipjack fufu can withstand stored in room temperature 
for 1 month. Thus it can be distributed throughout Indonesia as a food 
processed seafood. In North Sulawesi skipjack fufu is a favorite dish and is 
often presented as a souvenir for tourists visiting Manado. Although this dish is 
famous throughout eastern Indonesia, the location of production is the main 
fishing port town, Bitung, North Sulawesi. 
Skipjack fufu to the consumption of its own : 
- By way of heated and fried briefly in hot oil and immediately eaten with rice 
and Dabu-Dabu (sambal Minahasa). 
- Being ingredients for cooking other dishes. 
Fufu shredded tuna meat can be added in various dishes such as potato lettuce, 
tuna noodles, or cooked with chil, according to individual taste. 
C. Klappertaart 
Klappertaart in Indonesia is known as a typical cake Manado with the basic 
ingredients of coconut, flour, milk, butter, and eggs. The dough recipe is the 
influence of the current era of Dutch occupation in Manado. There is a 
miraculous way to cook klappertaart, and use bread when baked, it will generate 
klapperaart in solid form, can be cut like cake taart in general. 
But there is also a way of cooking that is not baked. This will produce a texture 
so soft, like eating eustard immediately melts into your mouth. This cake is most 
delicious when eaten in the cold, so it should not be left too long on the outside 
of the cooling.
