Jowar roti is famous but may
not be made by most of us
on regular basis, probably
because of not knowing the
perfect procedure to prepare
it. It is time you consider
this high fibre chapatti
that originated from North
Karnataka to include it in your
regular menu. Wondering
why? Here are the amazing
nutritious benefits from Jowar.
Jowar (Sorghum) is ancient
grain packed with higher
calcium content, iron, protein
and fibre. The gain has many
cardiac benefits as it contains
antioxidants and sorghum
wax. Policosanols in the wax
help in lowering cholesterol
levels. Thus, it is an amazing
grain that should be included
in your diet. It goes well with
raita, dal, curries or simple
Process to make roti
The procedure is similar to the
one used to make chapathi
or wheat flour roti. Once your
dough is ready, keep it aside
for 10 minutes. Then, take a
small piece of dough, make
it circular using your palm.
Place it on a flat surface of
your kitchen platform to press.
Use right hand to beat the
dough in the form of circle,
while you have to use left
hand to maintain circle. Keep
using dry flour intermittently to
avoid sticking of the dough to
the surface, while making roti.
Once the roti is prepared,
carefully transfer it to a hot
tawa.
While the rotiโs lower part gets
slightly dry, use a soft piece
of cloth to apply water on its
upper surface. Let the water
evaporates a little.
Now, carefully reverse the
roti and let the other side get
cooked by gently pressing
with cloth. The puffs of roti
separate into two layers with
steam inside.
Now take out your Jowar roti,
it is ready to serve.

prepare Jowar roti
* Jowar ata (flour): 250gm,
finely ground
* Salt to tast
* Boiled water: 1/2 cup
Method of preparation
of Jowar roti
Take a kadhai with shallow
depth and wide mouth. Put
finely ground Jowar atta into
it.
Add the water and process
the atta to make dough.
(This dough is called jigatu in
Kannada.)
To jigatu and add dry jowar
flour, knead it thoroughly with
just enough water.
See to it that the dough gets
consistency as that of
chapati dough (may be
even less water than
that).
