Israel has over 1,000 dairy farms that produce approximately 1.15 million tons of cow's milk annually worth $1.5 billion. The two main types of dairy farms are kibbutzim cooperatives with around 300 cows each and moshav private family farms with about 60 cows each. Israel's national dairy herd consists of 115,000 Israeli Holstein cows that have been bred to adapt well to the country's climate. Dairy production records incorporate data from milk testing, artificial insemination, and veterinary services programs. In 2005, the average Israeli dairy cow produced over 11,000 kg of milk per year containing 349 kg of protein and 398 kg of fat.
