Mama Maria’s is an Italian restaurant belonging to Sal’s
Pizzeria by John Esposito. This restaurant was opened in
1970 by John’s parents and he took over in 1990 when his
parents passed away.
Since 1989, Mama Maria has been a family business,
known for its extraordinary authentic Italian cuisine.
Dine at the Mama Maria’s restaurant to enjoy the
atmosphere and relish the hand-painted artworks that are
decorated throughout the restaurant.

Buffet Dinner Party
Total 9 dishes and 2 desserts for Non-Vegetarians, Muslims and Vegetarian guests, including 5 vegetarian friendly
dishes, 4 non vegetarian halal dishes especially for non vegetarian guests, and Muslim guests based on their dietary
requirements.
Two buffet lines will be available for guests following MUIS regulations.
Buffet dinner will be Self Service where the guests will help themselves to the food at the buffet counter and
proceed to sit at allocated tables.
NOTE:
No table service will be provided except to replenish beverages and clear dishes after consumption.
Food will be cooked and prepared 4 hours before the event and kept in an environment to prevent cross-
contamination of food in accordance with the regulations of the Singapore Food Board to avoid food poisoning.

Firstly, you determine the quantity of primary and secondary ingredients of
the dish and input the cost of these ingredients (see blue circle)
You then input the utility cost, which is an amortised cost of water, gas,
electricity and labour preparation costs for the dish (see green circle)
These inputs will be accumulated as the cost of the dish (see yellow circle)
Then you decide the estimated sale price of the dish (see red circle)
This will then tell you the cost percentage of the dish and the nett profit
(see orange circle)
You can change the estimated sale price of the dish to increase or lower
your nett profit.
This process is done for every dish of the buffet until you reached a
suitable price point for the dish

So we have our client Mr. Benjamin grey who is conducting a private event for celebration of his 50th wedding anniversary party.
The event is from 6pm to 12am and we have around 80 guests in which their are 20 Muslims guests and 20 vegetarian guests which require to consider for food choices based on their dietary restrictions. We have the total $10,000 budget to propose an event.
As our f&b team decided to celebrate the anniversary party at our restaurant Mama Maria's itself because we already had private event with more than 100 guests too and their are all the facilities available which u need for your party. Whether it's a private party, lunch party or just a friend's party, our restaurant can meet customer needs. The next two dishes are the Smoked Salmon Appetizers which is sliced salmon on cucumbers with Onions and Sour Cream.

The Vegetarian Tortilla Soup is a Tomato Based Soup with Tortilla Pasta Squares with Peppers, Zucchini, Spinach and Onions.
The Spaghetti Aglio Alio is cooked Al-Dente with Garlic, Peppers and Jalapenos in Olive Oil.
The Roasted Vegetables dish comprises Sun-Dried Tomatoes, Artichokes, Zucchini and Carrots.
The dish of Curried Couscous with Broccoli and Feta Cheese is cooked with Tomatoes and Onions.
Finally, the Baked Lasagna Rolls is filled with Peppers, Capsicums, Onions and layered with Pomodoro Sauce and Garam Masala.
The 5 dishes mentioned are also suitable options for those who are Non-Vegetarians.
There are four Halal dishes
The first dish is the Steak Frites, which is a Beef Fillet grilled and served with Potato Strips.
The next dish is the Prawn Curry which is de-shelled prawns cooked in Coconut Cream and Curry Sauce.
The next dish is the Chicken Yakiniku which is a Chicken Fillet cooked in Sesame Oil and Miso Paste
The final dish is the Achari Chicken Tikka is a Grilled Boneless Chicken cooked in Yoghurt and Masala.
The Desserts are Tropical Fruit Platter which is a platter of Oranges, Kiwi Fruits, Papayas, Grapes and Strawberries.
The other dessert is a Coconut Granola Yoghurt Parfait
For the buffet food menu, the team used a Food Cost Calculator to calculate the cost of ingredients for each dish before tabulating the cost of the dishes for the menu.
We factored in the dietary and religious preferences of the guests, the quantity of food to be catered, and decided the dishes and consolidated the total expenditure of the food menu.
The chart shows the percentage of each dish in comparison with all dishes.
Cost Factor is a very important aspect of the catering event.
The total cost of the dishes and the quantity of food for the event is within the allocated budget.
This is the summary of the individual cost of each dish, reflecting the Food Cost Percentage.
We have managed to keep the Food Cost between 26% to 38%.
Based on the volume of dishes to be catered, the total budget allocated for food is $4,000.00
The total cost of food to be catered is $3,095.20.

Halal Certified by MUIS Regulations - Muis is a statutory board under the Ministry of Culture, Community and Youth and is in charge of Muslim affairs in Singapore. Among others, Muis issues Halal certificates and regulates the Singapore Halal industry.
Written Contracts
PEST Control license - Pest control contract covering the control of rodents, cockroaches and flies during the year-long licensing period. The inspection frequency of the food shop premises covered in the contract shall be at least once a month to detect any sign of pest infestation.
Business License - his license is what gives you the authorization to operate within a particular geographic jurisdiction. Getting a business license usually involves filling out some paperwork and paying an application fee.
Foodservice License - This license usually involves and on site visit by city or county health department officials and ensures that your restaurant meets all food preparation, food storage and food safety regulations and laws. In some cases, employees must complete a food safety training program and have a food handler’s permit.
Employee Identification Number (EIN) - An EIN number is what tells the federal government that you are an employer. It is essentially a tax identification number, and you obtain it by visiting the IRS website, filling out a form and paying a fee. You can also apply by mail or by phone. Your EIN is the number under which you file your business taxes each year.
Food Handler’s Permit - Another legal necessity is an employee health permit. This permit guarantees that your restaurant meets food sanitation, storage, protection, and preparation regulations.
