INTRODUCTION
Mama Maria’s is an Italian restaurant belonging to Sal’s
Pizzeria by John Esposito. This restaurant was opened in
1970 by John’s parents and he took over in 1990 when his
parents passed away.
Since 1989, Mama Maria has been a family business,
known for its extraordinary authentic Italian cuisine.
Dine at the Mama Maria’s restaurant to enjoy the
atmosphere and relish the hand-painted artworks that are
decorated throughout the restaurant.
Located in East Grand Forks, it offers you the best Italian
cuisine in the area in a family-friendly atmosphere.
EVENT REQUIREMENTS

• Vegetarians = 20 guests
 Private event of Mr. Benjamin Gray and Mrs. Amaranthus Cowden to celebrate the 50th wedding anniversary.

Private Event
A private dining area for 100 guests available to hold
functions in. Whether it's a private party, lunch party or just
a friend's party, our room can meet customer needs.
Our restaurant offers freshly prepared salads, pasta and
pizza, perfect for any occasion, but we will customize the
menu based on the event.
From 10 guests to 500 guests, we help to make any event
memorable. We set up, clean and even provide staff to
distribute food. We work within all budgets.

 The cocktail reception has about 4 different types of finger food options, including 2 vegetarian-friendly
finger foods, 1 fish, 1 non-vegetarian halal food, cocktails and non-alcoholic cocktails.
 The service staff will provide you with services during the cocktail party.

Buffet Dinner Party
 Total 9 dishes and 2 desserts for Non-Vegetarians, Muslims and Vegetarian guests, including 5 vegetarian friendly
dishes, 4 non vegetarian halal dishes especially for non vegetarian guests, and Muslim guests based on their dietary
requirements.
 Two buffet lines will be available for guests following MUIS regulations.
 Buffet dinner will be Self Service where the guests will help themselves to the food at the buffet counter and
proceed to sit at allocated tables.
NOTE:
 No table service will be provided except to replenish beverages and clear dishes after consumption.
 Food will be cooked and prepared 4 hours before the event and kept in an environment to prevent cross-
contamination of food in accordance with the regulations of the Singapore Food Board to avoid food poisoning.

 6 PM – Arrival of guests
 6 PM to 7 PM – Cocktails Reception and Finger food
 7 PM to 8 PM - Cake Cutting Ceremony, games, and photography
 8 PM to 11:30 PM – Buffet dinner commences

The “mocktail" of Shirley Temple is
made of ginger ale and a small
amount of grenadine.

MOMENTS
Cake will be Chocolate bottom tier, golden vanilla top
tier. It is Filled with Swiss meringue butter cream.
During cake cutting ceremony,
 The picture display section shows the wedding photos
of the Gray couple from the first anniversary to the
49th anniversary of their marriage.
 Anniversary game for all couples at the party.
 The background will have a collage of Mr. and Mrs.
Gray and their favorite love song will be played.
 Cake cutting ceremony and cheers to 50 Years.

This is a sample of the Food Cost Calculator
I will explain the process.
Firstly, you determine the quantity of primary and secondary ingredients of
the dish and input the cost of these ingredients (see blue circle)
You then input the utility cost, which is an amortised cost of water, gas,
electricity and labour preparation costs for the dish (see green circle)
These inputs will be accumulated as the cost of the dish (see yellow circle)
Then you decide the estimated sale price of the dish (see red circle)
This will then tell you the cost percentage of the dish and the nett profit
(see orange circle)
You can change the estimated sale price of the dish to increase or lower
your nett profit.
This process is done for every dish of the buffet until you reached a
suitable price point for the dish

This restaurant was opened in 1970 by John’s parents and he took over in 1990 when his parents passed away. Since 1989, Mama Maria has been a family business, known for its extraordinary authentic Italian cuisine. Dine at the Mama Maria’s restaurant to enjoy the atmosphere and relish the hand-painted artworks that are decorated throughout the restaurant. Located in East Grand Forks, it offers you the best Italian cuisine in the area in a family-friendly atmosphere.

  • 5. EVENT VENUE Mama Maria’s restaurant Private Event A private dining area for 100 guests available to hold functions in. Whether it's a private party, lunch party or just a friend's party, our room can meet customer needs. Our restaurant offers freshly prepared salads, pasta and pizza, perfect for any occasion, but we will customize the menu based on the event. From 10 guests to 500 guests, we help to make any event memorable. We set up, clean and even provide staff to distribute food. We work within all budgets.

EVENT DETAILS Cocktail Reception and International Buffet Dinner concept Cocktail/Mocktail Party  The cocktail reception has about 4 different types of finger food options, including 2 vegetarian-friendly finger foods, 1 fish, 1 non-vegetarian halal food, cocktails and non-alcoholic cocktails.  The service staff will provide you with services during the cocktail party.

CONTINUE… Buffet Dinner Party  Total 9 dishes and 2 desserts for Non-Vegetarians, Muslims and Vegetarian guests, including 5 vegetarian friendly dishes, 4 non vegetarian halal dishes especially for non vegetarian guests, and Muslim guests based on their dietary requirements.  Two buffet lines will be available for guests following MUIS regulations.  Buffet dinner will be Self Service where the guests will help themselves to the food at the buffet counter and proceed to sit at allocated tables. NOTE:  No table service will be provided except to replenish beverages and clear dishes after consumption.  Food will be cooked and prepared 4 hours before the event and kept in an environment to prevent cross- contamination of food in accordance with the regulations of the Singapore Food Board to avoid food poisoning.

  1. Mama Maria’s is an Italian restaurant belonging to Sal’s Pizzeria by John Esposito. It offers a fantastic ambiance, top notch cuisine and excellent service. Since 1989, Mama Maria has been a family business, known for its extraordinary authentic Italian cuisine.
  2. So we have our client Mr. Benjamin grey who is conducting a private event for celebration of his 50th wedding anniversary party. The event is from 6pm to 12am and we have around 80 guests in which their are 20 Muslims guests and 20 vegetarian guests which require to consider for food choices based on their dietary restrictions. We have the total $10,000 budget to propose an event.

As our f&b team decided to celebrate the anniversary party at our restaurant Mama Maria's itself because we already had private event with more than 100 guests too and their are all the facilities available which u need for your party. Whether it's a private party, lunch party or just a friend's party, our restaurant can meet customer needs. Our restaurant offers freshly prepared salads, pasta and pizza, perfect for any occasion, but we will customize the menu based on the event.
  4. So, for your event we thought to propose Cocktail Reception and International Buffet Dinner concept. Lets get into details what we planned to provide, Cocktail/Mocktail Party Cake cutting ceremony and then Buffet dinner The cocktail reception has about 4 different types of finger food options, which includes 2 vegetarian-friendly finger foods, 1 fish and 1 non-vegetarian halal food along with cocktails and mocktails. During the Cocktail reception hours the service staff will provide you with services by themselves.

During the cake cutting ceremony, in background we are placing the Photo Collage and on the screen using projector we are planning to display pictures of couples. then cake cutting ceremony in which doing cheers to 50 years. later some entertainment like anniversary kind of games for all the couples present their.
  6. Next is the buffet dinner in which Two buffet lines will be available for guests following MUIS regulations. Total 9 dishes and 2 desserts for Non-Vegetarians, Muslims and Vegetarian guests, including 5 vegetarian friendly dishes, having 4 non vegetarian halal dishes especially for non vegetarian guests, and Muslim guests based on their dietary requirements. Buffet dinner will be Self Service Need to look at the points like: No table service will be provided except to replenish beverages and clear dishes after consumption. Food will be cooked and prepared 4 hours before the event and kept in an environment to prevent cross-contamination of food in accordance with the regulations of the Singapore Food Board to avoid food poisoning.

The Vegetarian Tortilla Soup is a Tomato Based Soup with Tortilla Pasta Squares with Peppers, Zucchini, Spinach and Onions. The Spaghetti Aglio Alio is cooked Al-Dente with Garlic, Peppers and Jalapenos in Olive Oil. The Roasted Vegetables dish comprises Sun-Dried Tomatoes, Artichokes, Zucchini and Carrots.
  17. The dish of Curried Couscous with Broccoli and Feta Cheese is cooked with Tomatoes and Onions. Finally, the Baked Lasagna Rolls is filled with Peppers, Capsicums, Onions and layered with Pomodoro Sauce and Garam Masala. The 5 dishes mentioned are also suitable options for those who are Non-Vegetarians.

The chart shows the percentage of each dish in comparison with all dishes. Cost Factor is a very important aspect of the catering event. The total cost of the dishes and the quantity of food for the event is within the allocated budget.
