Italian extravirgin olive oil - cultivar
1. Ogliarola
Altra tipica cultivar pugliese, produttrice di olive da olio è la Ogliarola.
La stessa cultivar viene prodotta in diversi posti della Puglia, assumendo così denominazioni differenti.
Ad es. la denominazione Cima di Bitonto viene utilizzata come sinonimo della Ogliarola barese, stando
proprio ad indicare che si tratta della cultivar più diffusa nella conca barese e forse anche una tra le più
rinomate al mondo.
Sapore dell'olio: L'olio che se ne ricava è di sapore molto gradevole, dal colore giallo intenso
tendente al verdino e si riconosce per il suo profumo e sapore di frutto non particolarmente
accentuato con residuo sentore di mandorla. L'olio proveniente dalla molitura di questa oliva
solitamente è dolce, con infimi valori di perossidi e acidità (max 0,21%) in condizioni di normalità; è
un olio dal sapore dolce e delicato.
Abbinamenti: Ideale in abbinamento a bruschette di pane fragrante, friselle salentine con pomodoro
e sale, pinzimonio, primi piatti gustosi con verdure o frutti di mare, rombo al forno, risotto con i
carciofi o carne alla griglia.
Drupa: peso medio di 2 gr., ovoidale. A maturità diviene di colore nero lucido.
Albero: Taglia grande, forte con sviluppo di rametti a frutto, sottili, lunghi e penduli.
Produttività: Media, con spiccata tendenza alla alternanza di produzione.
Resa in olio: Media 18/20%.
Resistenza: resiste al freddo, scarsa resistenza a parassiti e malattie.
Sapore dell'olio: ottimo con retrogusto aromatico fruttato, intenso, mandorlato, dolce e dal colore
giallo oro.
Ogliarola
Ogliarola is a typical Apulian cultivars. This variety is produced in different places in Puglia, thus
assuming different names . For example Top of Bitonto is the name is used as a synonym for the
Ogliarola from Bari , standing just to indicate that it is the most common cultivar in Bari basin and
perhaps one of the most famous in the world.
Taste the oil: The oil made from it has a very pleasant flavor , yellow color tending to greenish and is
recognized for its fragrance; the flavor of the fruit is not particularly accentuated with hints of almond
residue . The product coming from the milling of this oil is usually mild , with infinitesimally small
values of peroxides and acidity (max 0.21% ) in normal conditions ; it’s an oil with a sweet and
delicate flavor.
Serving suggestions: Ideal in combination with fragrant toasted bread , salting Friselle with tomato
and salt, dip, tasty pasta dishes with vegetables or seafood, baked turbot , risotto with artichokes or
grilled meat.
Drupa: average weight of 2 g . , Ovoid . When mature it becomes glossy black.
Tree: Size large, with strong development of branches in fruit , thin, long and pendulous.
Productivity: Media, with a strong tendency to alternate bearing.
Oil yield: Average 18/20 %.
Resistance: resistant to cold, poor resistance to pests and diseases.
Oil flavor: very aromatic with fruity aftertaste , intense, almond , sweet and golden yellow in color.
2. Coratina
Prende il nome dal comune di Corato (Bari), ma la sua reale origine, molto antica, è sconosciuta. È
coltivata nelle province di Bari e Foggia ma anche in altre zone della regione e d'Italia. Si adatta bene
anche alla coltivazione biologica.
Sapore dell'olio: L'olio proveniente dalla molitura di questa oliva solitamente è ricco di polifenoli,
con valori bassi di perossidi e infimi di acidità (< 0.2%); è un olio giallo-verde dal sapore molto
intenso e fruttato, leggermente amaro per l'alta concentrazione di oleuropeina e tipicamente
piccante per l'alta concentrazione di polifenoli. L'olio ha colore giallo con vividi riflessi smeraldini,
sapore fragrante con un piacevole retrogusto amarognolo leggermente pizzichino, è resistente
all’ossidazione.
Abbinamenti: Un olio deciso ma armonico. La sua naturale ricchezza in sostanze antiossidanti
(polifenoli e tocoferoli) lo rende adatto ad un uso crudo su arrosti di carne, zuppe di legumi,
minestre e bruschette fatte da pane abbrustolito sui carboni e condito con sale, pomodori, aglio e
rucola, ma anche come condimento in cottura per svariati cibi.
Drupa: Le olive di questa varietà sono particolarmente ricche di sostanze antiossidanti (polifenoli).
Sono allungate, leggermente asimmetriche e arrivano a pesare anche attorno ai 4 grammi..
Albero: di taglia media con branche assurgenti, aventi rami fruttiferi sottili, foglie a forma lanceolata
di media dimensione, di colorazione verde chiaro sulla pagina superiore e grigio chiaro in quella
inferiore.
Produttività: elevata e costante.
Resa in olio: abbastanza elevata e compresa tra il 20-25%.
Resistenza: adattabile a vari terreni e con buona resistenza alle malattie e al freddo.
Sapore dell'olio: L'olio ha colore giallo con vividi riflessi smeraldini, profumo fruttato intenso, sapore
fragrante con un piacevole retrogusto amarognolo leggermente pizzichino.
Coratina
Its name comes from the town of Corato (Bari ) , but its real origin is unknown. It has grown in the
provinces of Bari and Foggia but also in other parts of the region and Italy. It is also well suited to
organic cultivation .
Taste the oil: The oil from the milling of this oil is usually rich in polyphenols , with low values of
peroxides and acidity infinitesimally small (< 0.2 %); oil is a yellow-green flavor, very intense and
fruity, slightly bitter due to the high concentration of oleuropein and typically spicy for the high
concentration of polyphenols. The oil has a yellow color with vivid emerald reflections , fragrant
flavor with a pleasant slightly bitter aftertaste pinch , it is resistant to oxidation.
Combinations: An oil firm but harmonious. Its richness in natural antioxidants (polyphenols and
tocopherols ) makes it suitable for use on raw meat roasts , soups, soups and bruschetta made from

condiment in cooking various foods .

flavor with a pleasant slightly bitter pinchy aftertaste.
3. Peranzana
La “Peranzana” è una cultivar pura, non una ibrida. Il nome deriva dalla storpiatura dialettale del
luogo d’origine, cioè la Provenza. Un profumo fruttato dal sapore dolce con note di carciofo, cui si
associa un retrogusto di pomodoro verde e mandorla: è l'identikit dell'olio DOP ricavato dalla
«peranzana» con una tipicità che trova la sua origine nella tradizione, nel genotipo e nelle particolarità
pedo-climatiche del territorio.
Sapore dell’olio: Le olive di Peranzana sono di media grandezza e l’olio che se ne ricava ha una acidità
molto bassa ed un gusto molto equilibrato, ciò significa che l’olio, appena estratto, è pronto per il
consumo, senza bisogno di un periodo di maturazione o di essere miscelato con altri oli, cosa che ne
ridurrebbe solo la qualità.
Abbinamenti: Indicato su pietanze che richiedono un complemento alimentare dal carattere deciso
come la carne alla brace, la bruschetta, il pinzimonio.
Drupa: Pezzatura media

Peranzana
The " Peranzana " is a pure cultivar , not a hybrid . The name comes from the mispronunciation of the
dialect of the place of origin , that is Provence. A fruity sweet flavor with notes of artichoke , which is
associated with a hint of green tomato and almond is the identikit of DOP derived from " peranzana "
with a typicality that finds its origin in the tradition , in the genotype and pedo -climatic characteristics
of the area.
Taste the oil: for the olives Peranzana are medium in size and the oil made from it has a very low
acidity and a very balanced taste , this means that the oil , just extracted ,is ready for consumption
without the need of a period of maturation or to be mixed with other oils , which would reduce the
quality only .
Pairings: Ideal on dishes that require a food supplement with a strong character such as grilled meats,
bruschettas , crudités.

4. Gentile di Chieti
Cultivar molto rustica e di grande adattabilità alle zone collinari più interne dell'Italia centrale.
Sapore dell'olio: Dall'aspetto verde brillante con riflessi dorati. All'olfatto si presenta con un Gusto
armonico e soave, con sentore di erba fresca, mela e delicato richiamo aromatico.
Al palato è fresco e avvolgente con una dolcezza in armonia con una tipica scia di sapori speziati.
Abbinamenti: Olio per tutti i pasti, soprattutto a crudo. Si combina bene con pesce e insalate
delicate. Ottimo per arricchire tutti i primi piatti a base di pasta e riso. Da provare sulle carni crude,
tartare per esempio o grigliate in generale.
Drupa: Destinate al frantoio le drupe hanno una maturazione molto tardiva; alla raccolta sono
nero-violacee e di piccole dimensioni (1-2g).
Albero: Pianta vigorosa con chioma folta e molto sviluppata; portamento espanso e rametti patenti,
non penduli, con foglie verdi lucenti.
Produttività: Elevata ma alternante
Resa in olio:La resa media risulta del 17-21%, mentre l'olio ottenuto è fine e di gusto particolarmente
delicato
Resistenza:Resiste bene alle diverse avversità parassitarie ed atmosferiche presenti nella zona di
origine.
Sapore dell'olio:Al palato è fresco e avvolgente con una dolcezza in armonia con una tipica scia di
sapori speziati.
Gentile di Chieti
A very rustic cultivar and with a great adaptability to inland hilly areas in central Italy.
Oil flavor : bright green with golden reflections. It shows a gentle and harmonious taste , with hints of
fresh grass , apple with a delicate aromatic appeal .
The taste is fresh and inviting, with a sweetness in harmony with a typical trail of spicy flavors .
Serving suggestions: ideal for any type of food , especially raw. It’s perfect on fish and delicate salads
. Great to enrich all the main courses based on pasta and rice. Try on raw beef tartare , for example, or
on grilled meat.
Drupa: such olives have a very late ripening ; when harvested they have a black - purple color and are
quite small ( 1 -2g ) .
Tree: vigorous plant with dense foliage and well developed ; the trunk is wide and strong, with shiny
green leaves .
Productivity: High but alternating
Oil yield: The yield is the average 17-21 %, while the oil obtained is particularly fine and delicate to
the taste
Resistance: Good resistance to adverse weather and parasitic diseases.
Oil flavor: The taste is fresh and inviting, with a peculiar sweetness and harmony characterised by a
typical trail of spicy flavors .
5. Leccino
Probabilmente di origine toscana, il Leccino è una delle cultivar di olivo più ampiamente diffusa nel
territorio italiano, ma le sue caratteristiche ne hanno facilitato una certa fortuna anche all'estero.
Cultivar molto rustica e di diffusione mondiale. Più recentemente questa cultivar ha trovato impiego
anche per la produzione di olive da tavola del tipo cangiante o nero.
Sapore dell’olio: L' olio, giallo dorato con riflessi verdi, è di ottima qualità ma, per alcuni, senza
particolari picchi aromatici; dal sapore fresco, poco fruttato, leggermente amaro e piccante; vi si
scorgono note di erbe aromatiche (basilico, menta), cicoria, lattuga, carciofo e mandorla.
Abbinamenti: essendo fragrante, molto delicato e dolce si abbina molto bene con il pesce, con le
carni bianche ed anche con verdurine bollite.
Drupa: Le olive di tale varietà raggiungono il peso di 2/2,5 gr., si presentano carnose ellissoidali,
raccolte in infruttescenza, con maturazione precoce e colorazione diffusa, nera.
Albero: vigorosa e di facile adattamento ai diversi ambienti pugliesi. La rizogenesi è elevata. Entra in
produzione precocemente. I fiori hanno bassa percentuale di ovari abortiti.
Produttività: discreta, costante senza alternanza.
Resa in olio: medio-bassa 17-22%.
Resistenza: a sbalzi di temperatura, ad avversità quali l'occhio di pavone e alla raccolta meccanica.
Sapore dell’olio: poco fruttato.
Leccino
Probably of Tuscan origin , Leccino olive cultivar is one of the most widely circulated in the Italian
territory , but its features have allowed it to be well known also abroad. It’s a very rustic Cultivar,
globally widespread. In the recent years, this cultivar has also been used for the production of edible
olives.
Oil flavor: golden-yellow with green reflections, it is of excellent quality but , for some, with no
particular aromatic peaks ; fresh taste , slightly fruity, slightly bitter and spicy ; you can notice hints of
herbs ( basil, mint), chicory , lettuce, artichoke and almond.
Pairings: being fragrant, delicate and sweet it’s ideal on fish, white meats and boiled vegetables.
Drupa: The olives of this variety reach a weight of 2/2, 5 gr. , they are juicy with an ellipsoidal shape,
harvested in infructescence , with early maturing and diffuse staining , of dark-black color .
Tree: vigorous and easy to adapt to different environments of Puglia. The rhizo-genesis is extremely
high. Its production starts early in the olive season. The flowers have a low percentage of aborted
ovaries .
Productivity: moderate, continuous without alternation .
Oil yield: 17-22 % medium-low .
Resistance: resistant to temperature changes, adversities such as the peacock eye and mechanical
harvesting .
Oil flavor: slightly fruity.
