E. coli is a type of bacteria that can cause serious food poisoning in humans. There are different strains of E. coli, with O157:H7 being the most dangerous as it can cause kidney failure and even death. E. coli bacteria are found in the intestines of cattle and can spread to foods like beef and produce if manure is used as fertilizer. Symptoms of E. coli infection include stomach cramps, diarrhea and vomiting. While most cases resolve without complications, some people may develop hemolytic uremic syndrome. To protect yourself, properly cook meat, wash produce, and practice good hand hygiene.
